Question: Recipe ideas for a barbecue potluck!?
The hosts are supplying all of the meat and buns, but they've asked everyone to bring a dish to compliment!. Any ideas for something unique and easy to bring!? Side dishes and dessert recipes are welcome!.

Southwestern Rice and Bean Salad
4 cups cooked rice
1 can black beans, rinsed and drained
1 can whole corn, drained
1 cup mild salsa
1/2 cup mayo
1/2 cup chopped cilantro
salt and pepper to taste

What about somethings like pasta salad, fruit salad or just good plain veggie salad!. Or you can make cookies, these are easy to carry too and if you use cake mix, it's just very easy to make!.
or you can take something like cheese and crackers with you!. Everyone loves it and it doesn't need much preparation and its easy to bring too!.
Or you can make a nice salsa and bring it along with chips or tortilas or anything you like!.

Any one of the following recipes are great for a BBQ!. They are all great!.



Antipasto Salad


4 oz!. hard salami, diced
1 cup mushrooms, sliced
1 small red onion, thinly sliced
1 cup pitted olives, halved
? cup Italian salad dressing

8 oz!. pasta of choice

1 cup cherry tomatoes, halved
? cup green peppers, diced
1 cup celery, diced
1 Tbsp!. vegetable oil
1 tsp!. salt
? tsp!. black pepper


1!. Place salami, onions, olives and mushrooms in a large bowl!.
2!. Add Italian dressing, cover and refrigerate at least 3 hours!.
3!. Cook pasta, according to package directions, 1 hour before serving; drain well!.
4!. Add pasta, celery, tomatoes, green peppers, vegetable oil, salt and pepper to marinated salami mixture; toss to mix!.
5!. Cover, return to refrigerator for at least 30 minutes before serving!.


Makes 10 servings


Black Beans and Corn Salad

2 cans black beans, drained and rinsed
1 can whole kernel corn, drained
1 can tomato bits
1/4 tsp!. garlic powder
1/4 tsp!. chili powder or cumin
2 Tbsp!. sweet pickle relish (optional)
1/8 tsp!. cayenne or red pepper
1/2 cup onion, chopped


1!. Drain and rinse black beans along with corn!.

2!. Combine black beans, corn, tomato bits, and relish in a large bowl!.

3!. Add garlic powder, cayenne pepper, cumin and onion flakes!.

4!. Stir all ingredients until well mixed!.

5!. Cover and refrigerate or serve immediately!.


Jumping Bob



1 lb!. roll of pork sausage
? cup onions, chopped
1 cup uncooked rice
2 cups water
? Tbsp!. butter or margarine
? tsp!. salt
2 cans black eyed peas (or kidney beans), not drained
2 pickled jalapeno peppers, diced (optional)


1!. Add water along with salt in a saucepan and bring to a boil; add butter!.
2!. Stir in uncooked rice, cover, and reduce heat to a simmer; cook for
15 to 20 minutes or until water is absorbed!.
3!. Meanwhile, brown crumbled pork sausage and onions in a skillet
over medium heat; drain well!.
4!. Bring peas or beans to a boil in a large saucepan!.
5!. Add rice, onions, sausage along with diced jalapeno pepper to peas
(or beans) and reduce heat!.
6!. Simmer for an addition 5 to 7 minutes or until mixture is thoroughly heated before serving!.


Western Style Baked Beans

8 slices of bacon, cooked and crumbled
2 onions, halved and thinly sliced
? cup brown sugar, firmly packed
? tsp!. garlic powder
1 tsp!. dry mustard
1 tsp!. salt
1 cup cider vinegar
2 cans red beans, drained and rinsed
2 cans light red kidney beans, drained and rinsed
2 cans pork and beans, undrained
Cooking spray

1!. Preheat oven to 350 degrees!.
2!. Place onions, vinegar, mustard, brown sugar and salt in a skillet!.
3!. Cover and cook over low heat for about 20 minutes or until are tender; stirring occasionally!.
4!. Meanwhile, place beans in a 4 quart baking dish lightly coated with cooking spray!.
5!. Add onion mixture to beans and stir in crumbled bacon
6!. Stir to mix well and cover!.
7!. Bake for 30 minutes
8!. Stir and return to oven, uncovered, for an additional 30 minutes!.

Makes 12 servings

Pasta and Broccoli

? lb!. (8 oz!.) pasta, uncooked
1 package (10 oz!.) frozen chopped broccoli
4 cups water
1 teaspoon salt
2 tablespoons olive oil
1 teaspoon of minced garlic or garlic juice

1!. Place water with salt added in a large pot and bring to a boil

2!. Add broccoli and cook for five minutes!.

3!. Add pasta and continue boiling for 12 minutes more!.

4!. Add olive oil and garlic; stirring thoroughly!.

5!. Serve hot or cold!.

This is very good and the recipe is also on the box of pasta!.

FROG EYE SALAD

Cook Acini Di Pepe macaroni: Bring 6 cups water to a rapid boil in 3 quart saucepan!. Add 2 teaspoons salt!. Slowly add 1 cup Acini Di Pepe!. Return to rapid boil, stirring to separate!. Boil only 2 minutes!. Cover and remove from heat!. Let stand 6 to 8 minutes!. Drain immediately and rinse with cold water to chill!.

3/4 c!. sugar
2 tbsp!. flour
1/2 tsp!. salt
2/3 c!. pineapple juice (from canned pineapple shown below)
2 eggs, beaten
1 tsp!. lemon juice

In small saucepan, mix sugar, flour and salt; stir in pineapple juice and egg!. Cook over moderate heat, stirring constantly until thickened (or cook in microwave)!. Add lemon juice, set aside and cool!.
Combine cooked, cooled mixture with cooled Acini Di Pepe!. Cover, place in refrigerator until chilled!. Add the following:


2 cans (11 oz!. each) mandarin oranges, drained
1 can (20 oz!.) pineapple tidbits, drained
1 can crushed pineapple, drained
1 carton (8 oz!.) dairy whipped topping
1 c!. miniature marshmallows

Stir lightly!. Chill at least 1 hour before serving!.Www@FoodAQ@Com

something simple would be some buttered corn with some peas mixed in,
some cheddar-garlic biscuits (Martha White and Bisquick both make easy to make mixes),
A watermelon, with the rind cut off and cut into chunks,
a storebought frozen poundcake (or a homemade one if you have time) and a berry sauce (get fresh or frozen berries, cook with sugar and a little lemon juice, thicken with a bit of cornstarch),
some sliced fresh tomatoes with a bottle of squeeze mayo/miracle whip on the side,
sauteed onions and zucchini (cook in olive oil/butter until browned and season with garlic powder, s&p),

Why not take a pot of 'Boston' Baked Beans!? Add some lemon juice, chilli flakes, chopped onions and molasses to a large can of baked beans, put on the heat and stir until mixed!. Not an authentic recipe but an easy, flavourful side dish!.Www@FoodAQ@Com
