I agree with everyone - get a peeler, but make sure you get the wide-blade kind (not the typical skinny) so you get the right size ribbons out of it!.Www@FoodAQ@Com

im afraid you need a machine!.
one could try to do it by peeling a long continuous ribbon around the potatoe but it would take forever!.
when i was a kid there was a place we,d go (cafe) and they did it with an apple peeler!.
youre right though about the expense, any where from 100!.00 -500!.00 dollars!.Crazy huh!?
but i also found a apple /potatoe peeler on line for around 25!.00 dollars ,not too bad huh!? and it seems to come closer to making the ribbon type cut you want!.
good luck!.Www@FoodAQ@Com

If they're flat ribbon fries and not the thicker curly fries (sorry, city slicker here, never been to a fair) The Joan Chen Slicer can do the job!.!.!.it's about 30 dollars and there are many other vegetable you can use it to cut!.Www@FoodAQ@Com

the "curly fries" at the fair are cut with anything that will cut the potato in strings from one end to the other in a uniform size!. I use a paring knife to do these!. Takes a bit of practice, but you can do it!.Www@FoodAQ@Com

If you go to a cooking specialty store they should have a few manual tools for this purpose!.Www@FoodAQ@Com

use a cheese slicer or a potato peelerWww@FoodAQ@Com

get an apple peeler from walmartWww@FoodAQ@Com

I agree apple peeler from Walmart or bed bath and beyond for 20 bucks or lessWww@FoodAQ@Com
