The leaves should be tightly bound and fresh looking!. The color should be fairly consistent, not grey, and they should be free of brown, black or white spots!. The texture should not be too rubbery!.

I steam them about 25-45 minutes depending on size and serve with a sauce made of mayo and a few drops of hot sauce (maybe some lemon juice) and/or garlic butter for dipping!. You know they're done when the leaves pull away easily, I taste test and outer leaf!.Www@FoodAQ@Com

cook them fresh from the store, cut the bottoms so they sit flat, place them in a baking dish pour olive oil over them and suff garlic between the leaves a little salt and pepper and bake at 375 for 45 minWww@FoodAQ@Com
