Vegetable Stir-fry over brown or white rice!.
Chop your veges to the same size, use as many as you like, I like broccoli, carrots, corn sliced off a cob, peas, onions, garlic, mushrooms, tomatoes,(adds liquid and becomes a sauce which is lovely over the rice), bell peppers, red, and green, them I Cook 1/2 a cup of rice, to make one cup after cooking!. Set that aside!.
Saute all the veges by cooking time, in Olive Oil, don't add them all together, carrots, mushrooms take the longest, so add them first!. then the other veges can go in together!. Saute until almost cooked through!. ADD salt/pepper, dried Oregano, Basil, Thyme, a teaspoon of each (for a spicy kick you can add jalapenos, from a jar at the end of the cooking time!.
The tomatoes will have made a broth but you can add a dash of soy sauce or Worcester for more, if you wish!.
Poor over the warm rice and YUM, EAT!
You can also add grated cheese on top of that, if you like, any melting cheese is great like Gouda, cheddar, provalone, whatever!. Happy Healthy Cooking!Www@FoodAQ@Com
