Paula Deans recipe, in my opinion, is the best! Here it is for you I bake it often and everyone enjoys it every time I bake one!.

Paula’s Red Velvet Cake

For the Red Velvet Cake:
2 1/2 cups all-purpose flour (recommended: White Lily)
1 teaspoon baking soda
1 teaspoon cocoa
1 1/2 cups granulated sugar
2 eggs
1 1/2 cups canola oil
1 teaspoon vinegar
1 (1-ounce) bottle red food coloring
1 teaspoon vanilla
1 cup buttermilk
For the cream cheese frosting:
1/2 cup margarine
1 (8-ounce) package cream cheese
1 box confectioners' sugar, sifted
1/2 teaspoon vanilla
1 cup chopped lightly toasted pecans
For the Red Velvet Cake:
Preheat oven to 350 degrees F!. Grease and flour 3 (9-inch) round layer cake pans!.
Sift flour, baking soda and coco together!. Beat sugar and eggs together in a large bowl!.
In a separate bowl mix together oil, vinegar, food coloring, and vanilla!. Add to the bowl of eggs and sugar and beat until combined!.
Add the flour mixture and the buttermilk to the wet mixture by alternating the buttermilk and dry ingredients!. Always start with the flour and end with the flour!.
Pour batter into pans!. Tap them on the table to level out the batter and release air bubbles!. Bake for 25 minutes or until a cake tester inserted near the middle comes out clean but be careful not to over bake or you'll end up with a dry cake!.
Let layers cool on a wire rack for about 10 minutes before turning out of pan!. Cool completely before frosting!.
For the cream cheese frosting:
This is the "official" cream cheese frosting recipe but we always use about 1 1/2 recipes on each cake to cover it well!.
Let margarine and cream cheese soften to room temperature!. Cream well!. Add sugar and beat until mixed but not so much that the frosting becomes "loose"!. Add vanilla and nuts!. Spread between layers and on top and sides of cake!.

RED VELVET CAKE

1 cup butter, softened
3 cups white sugar
6 eggs
1 ounce red food coloring
3 tablespoons unsweetened cocoa powder
3 cups all-purpose flour
1 cup buttermilk
1 teaspoon vanilla extract
1/2 teaspoon salt
1 teaspoon baking soda
1 tablespoon white vinegar

2 (8 ounce) packages cream cheese
12 ounces white chocolate
1 cup butter, softened

Preheat oven to 325 degrees F (165 degrees C)!. Grease and flour three 8 inch pans!. In a large bowl, cream 1 cup butter with sugar!. Add eggs one at a time, beating well after each addition!. Mix food coloring with cocoa and add to mixture!. Add flour alternately with buttermilk!. Add vanilla and salt!. Mix baking soda with vinegar, and gently stir into mixture!. Be careful not to over mix!. Divide batter into three prepared 8 inch round pans!. Bake at 325 degrees F (165 degrees C) for 25 minutes!. Allow to cool!. To make the White Chocolate Cream Cheese Icing: Melt the white chocolate and allow to cool to lukewarm!. In a large bowl, beat the cream cheese until light and fluffy!. Gradually beat in melted white chocolate and softened butter!. Beat until it is the consistency of whipped cream, then use to fill and frost the cake!.

Red Velvet Cake with Vanilla Cream Cheese Frosting



Moist and luscious, red velvet cake is as delightful to behold as it is to eat!
Makes 16 servings





2 1/2 cups all-purpose flour
1/2 cup cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
2 sticks (1 cup) butter, softened
2 cups sugar
4 eggs
1 cup sour cream
1/2 cup milk
1 bottle (1 ounce) McCormick? Red Food Color
2 teaspoons McCormick? Pure Vanilla Extract

Vanilla Cream Cheese Frosting:
8 ounces cream cheese, softened
4 tablespoons butter, softened
2 tablespoons sour cream
2 teaspoons McCormick? Pure Vanilla Extract
1 box (1 pound) confectioners' sugar


1!. Heat oven to 350°F!. Sift together flour, cocoa, baking soda and salt; set aside!. Cream butter and sugar in a large mixing bowl with electric mixer until fluffy, 5 to 7 minutes!. Beat in eggs one at a time!. Mix in sour cream, milk, food color and vanilla!. Gradually blend in flour mixture, just until incorporated!. Do not over blend!.
2!. Pour batter into 2 greased and floured 9-inch round cake pans!. Bake 35 to 40 minutes or until toothpick inserted in center comes out clean!. Cool 10 minutes before removing from pan to cool on wire rack!.

3!. For frosting: Beat cream cheese, butter and sour cream in a medium bowl!. Add remaining ingredients and mix until smooth!. Cool cake completely before frosting!.

Tip: Substitute a greased and floured 12-cup Bundt cake pan!. Bake about 50 minutes!. Or substitute a 13x9-inch greased and floured baking pan and bake about 40 minutes!.








RED VELVET CAKE

2 1/2 c all purpose flour
1 1/2 c sugar
1 1/2 c oil
1 c buttermilk

1 tsp vanilla
2 tsp cocoa
1 tsp salt
1 tsp soda

1-2oz bottle red food coloring (or 2-1oz bottle)

Mix all ingredients together and bake at 350F for about 30 to 35 minute!.

Icing:

1 Box (16oz) confectioner's sugar (sifted)
1 stick butter, softened
1 8oz package cream cheese
1 tsp vanilla
1 cup mixed nuts
sugar
butter
cream cheese
vanilla
Combine first 5 ingredients!. Add remaining ingredients until icing forms peaks!. Fold in the nuts and spread over the cake!.

1 tsp!. vinegar
5 1/2 tbsp!. all-purpose flour
1 c!. milk
1 c!. butter

Step 1: Preheat oven to 350 degrees F!.
Step 2: Cream shortening and 1 1/2 c!. of the sugar with an electric mixer!.
Step 3: Add eggs, cocoa, food coloring and 1 tsp!. vanilla!. Mix well!.
Step 4: Stir in flour and salt, alternating with buttermilk!.
Step 5: Mix soda and vinegar and stir quickly into mixture as it foams!.
Step 6: Pour batter into two 8-inch layer cake pans or into one 13-by-9-by-2-inch pan!.
Step 7: Bake in the middle of the oven for 25 to 35 minutes, or until a tester comes out clean!.
Step 8: For frosting, whisk together 5 1/2 tbsp!. flour and milk in a saucepan!. Cook until thickened and set aside to cool!.
Step 9: Add butter, remaining 1 c!. sugar and remaining 1 tsp!. vanilla to milk and flour mixture!. Beat well!.
Step 10: Frost cooled cake with frosting!.

This recipe from smittenkitchen!.com is absolutely the best red velvet cake I've ever made!. Seriously!. The only edit I have is that the small 1-oz bottle of red food coloring (2 tablespoons) is plenty red; make up for it with 1/4 cup plain water!.
