Question: How long in advance is it ok to prepare a Tortilla Espanola (egg, potato, and onions)!?
Answers:
I am a former chef and agree in principal with the first lady, but for me they have more flavour at room temperature, and the eggs are cooked so the rise of food poisoning is quite low, left on the counter for a few days then it will not be edible!.

I par boil my potatoes, and saute them with the onions until lightly browned and then add the eggs, I like to also bake it to form the set middle and then flip it on a plate and finish it on the stove!.

This is one dish to I will use good olive oil, and a bit of fresh garlic, make sure the eggs are well seasoned as the potatoes can draw out the salt if not in a good proportion!.Www@FoodAQ@Com

You can make it hours in advance, the tortilla espanola is served as appetizer and it is usually cold!.
