Question: I've overcooked some roast beef!. What can I do (or cook it into) to make it more tender!?
Can I marinate it or cook it in a stew or pie!?

You bet you can turn that tough beef into a great pie,or stew or soup!!!
cube it,carrots,celery,onion,garlic,fresh rosemary,thyme, and of course tomatoes!.!.saute it all together,add potatoes for a stew or soup!.or put into pastry!.!.just make sure you flavour it well with a veal stock!.!.thicken it if you need to for a pie!.
other wise enjoy,for soups and stews i like dumplings!.!.

well, soup would be the first suggestion!.!.!.but since i have tried this recently (not because of overcooking, but intentionally making the recipe), you can make a really good potato and roast beef salad!.

take some red potatoes -- boil them until fork tender, but not falling apart!. add some fresh veggies of your liking (diced bell pepper, mushroom, asparagus tips, etc!.)!. Make a dijonnaisse (mustard & mayo mixed together), fold in to the potatoes & veggies, finally add in the beef!.!.!.there shouldn't be too much mayo!.!.!.it is only used for moisture, not flavor!. when you add in the beef it shouldn't be swimming in the mayo/mustard) i quite enjoyed this version of potato salad!. definitely different than the norm!.
