*SUGAR FREE REFRIGERATOR BLUEBERRY JAM

1 pt!. fresh blueberries
1 packet liquid pectin
2 tbsp!. fresh lemon juice
Sugar substitute to equal 5 to 6 tbsp!. sugar or to taste (opt!.)

Combine ingredients in covered blender or food processor and puree smooth!. Pour into 2 jelly jars!. Cover and refrigerate undisturbed 24 hours or until set!. Transfer the second jar to the freezer, if desired!. Keep under refrigeration!. Makes 2 cups!. 8 calories per tablespoon!.

BLUEBERRY SPREAD: Puree 1 pint fresh blueberries in the blender or food processor!. (Sweeten to taste with sugar substitute!.) Pour into a covered jar and refrigerate 24 hours, until slightly thickened!. Use as a bread spread or a topping!. Under 10 calories per tablespoon!.

*SUGAR FREE RHUBARB JAM

6 c!. rhubarb
1/4 c!. water
1 (3 oz!.) pkg!. sugar free Jello (strawberry or raspberry)
2 tbsp!. Sweet 10

Cook rhubarb and water until soft!. Let cool completely and then add sugar free Jello and Sweet 10!. Put in clean jars and refrigerate!.

*SUGAR - FREE STRAWBERRY JAM

1/4 c!. fresh lemon juice
1 env!. unflavored gelatin
1 tbsp!. cornstarch
Dash of salt
1 (1 lb!. 4 oz!.) bag, partially thawed, frozen, unsweetened whole strawberries
Artificial sweetener equivalent to 2 c!. sugar
Paraffin (for sealing)
Three 1-cup jelly jars

Boil jelly jars for 15 minutes!. Remove jars from water with tongs that have been boiled for at least one minute!. Let stand upside down until drained!. In a medium saucepan, mix together lemon juice, gelatin, cornstarch and salt!. Add strawberries, stirring constantly!. Heat to a full boil!. Boil 3 minutes!. Remove from heat!. Stir in artificial sweetener!.
Fill jelly jars!. Melt paraffin in top of double boiler or saucepan on low heat!. Pour on melted paraffin, covering with a layer about 1/8 to 1/4 inch thick!. Set aside to cool!. Refrigerate!.

*Blueberry-Peach Conserve

(makes four 1/2-pint jars)
1 medium navel orange
1 large lemon
2 1/2 pounds firm ripe peaches, peeled and sliced
2 cups fresh blueberries
1/3 cup granulated sugar
1/2 cup white grape juice
1 tablespoon plus 1 teaspoon Sweet 'N Low ?

Peel the orange and lemon; finely chop rind (zest)!. Remove seeds from pulp and chop pulp!. Place the fruit, their juices, and rind (zest) in a large pot!. Add the peaches and blueberries; sprinkle with sugar and let stand for 30 minutes!. Add the grape juice and Sweet 'N Low?!.
Place over medium heat and bring to a boil!. Boil, stirring frequently, for 35 to 45 minutes or until fruit is thick and translucent!.
Spoon into hot sterilized 1/2 pint jars, allowing 1/4-inch head space!. Wipe rims with a clean cloth that has been dipped in hot water!. Close the jars according to jar manufacturer's instructions and process in a boiling-water bath for 15 minutes!.
#Note: Because Sweet 'N Low? provides only the sweetening and not the preserving qualities of granulated sugar, jams made with Sweet 'N Low? must be refrigerated and used within 2 weeks if not frozen!.

*SUGAR-FREE MIXED BERRY JAM

3/4 pt Strawberries -- hulled
3/4 pt Blackberries
3/4 pt Gooseberries -- trimmed
1 c Apple juice concentrate

Rinse and drain berries!. Place half of the berries in
a blender or food processor and puree!. Transfer
pureed berries to a saucepan along with unprocessed
berries!. Simmer mixture gently until fruit is cooked!.
Stir in the apple juice concentrate and boil for 15
minutes, until mixture reaches setting point (220 F!.
on a candy thermometer)!. Mixture is ready when a
teaspoonful chilled on a saucer a few minutes in the
freezer does not flow back together when you run a
finger through it!.Remove from heat and pour into sterilized jars!. Seal
according to jar manufacturer's instructions!. Store
in a cool place up to 4 weeks, or in the refrigerator!.

* Sugar Free Strawberry Jiffy Jam

2 cups strawberries
1 cup cold water
1 (3 ounce) package strawberry flavored gelatin, sugar free

In a large saucepan crush strawberries!. Add water and gelatin, mixing well!.Over medium heat bring mixture to boiling, stirring constantly!. Triple-Berry Jam

INGREDIENTS:
4 cups fresh strawberries or
thawed frozen unsweetened
strawberries
2 cups fresh raspberries or
thawed frozen unsweetened
raspberries 1 cup fresh blueberries or
thawed frozen unsweetened
blueberries
1 (1!.75 ounce) package no-
sugar-needed pectin
3/4 cup Equal? Spoonful*

DIRECTIONS:
1!. Mash strawberries, raspberries and blueberries by hand or with food processor to make 4 cups pulp!. Stir in pectin; let mixture stand 10 minutes, stirring frequently!.
2!. Transfer to large saucepan!. Cook and stir over medium heat until mixture comes to a boil!. Cook and stir 1 minute more!. Remove from heat; stir in Equal?!. Skim off foam, if necessary!.
3!. Immediately fill containers, leaving 1/2-inch headspace!. Seal and let stand at room temperature until firm (several hours)!. Store up to 2 weeks in refrigerator or 3 months in freezer!.

3/4 c!. sugar-free strawberry pop
1 pkg!. strawberry sugar-free Jello
3 packets Equal

Mash the berries, add soda pop and cook 1 minute!. Remove from heat and stir in Jello until dissolved!. Stir in sweetener and pour in jars!. Seal and store in refrigerator!. Yield 1 1/4 cups!. You may use other fruits such as raspberries, peaches or cherries!.
There were no counts with this, you would have your fruit , it would not be alot but remember still has some carbs

I don't, but you can buy really nice sugar free jams, i forgot what it was but they're good!.
