RED PEPPER JELLY

6 sm!. red peppers (1 1/4 lbs!.)
1 c!. vinegar
1/2 tsp!. salt
5 c!. granulated sugar
1 bottle liquid Certo

Chop peppers fine!. Measure 2 cups pepper and juice in large pot!. Add vinegar and salt!. Bring to boil, reduce heat and simmer covered 10 minutes until tender!. Stir in sugar, return to rolling boil and boil, uncovered and stir one minute!. Remove from heat and immediately stir in Certo!. Stir for 5 minutes to blend!. Pour jelly into sterilized jars and seal!. Serve over Philadelphia cream cheese with crackers!.



RED PEPPER JELLY

4 lg!. red bell peppers (about), seeded
5 1/2 c!. sugar
1/3 c!. fresh lemon juice
1 pkg!. fruit pectin
3/4 c!. distilled white or wine vinegar

Finely chop peppers in processor or run through grinder!. Strain, pressing lightly!. Measure 2 full cups and 1/4 cup pepper juice!. Discard remaining juice!. Combine ground peppers, pepper juice, sugar and vinegar in 3-4 quart saucepan!. Bring to boil, stirring frequently!. Remove from heat and let stand 15 minutes!. Reheat to boil, stirring frequently!. Add lemon juice and return to boil for 1 minute, stirring!. Add pectin and let boil 3 minutes, skimming off foam as it accumulates!. Pour into jars!. Invert jars for 10 minutes!. Upright jars and store in a cool place!. Serving suggestions: Great over 4 ounces of cream cheese with unsalted crackers or on a grilled bagel!.

this is the one I ALWAYS use and it works great for me!. Is what you had in mind a hot jelly if not you may not be at all interested in this recipe

Original recipe yield 3!.5 cups

SERVINGS


INGREDIENTS
1 1/2 cups finely chopped green bell pepper
1 1/2 cups finely chopped hot peppers of your choice
1 1/2 cups distilled white vinegar
6 1/2 cups white sugar
6 ounces liquid pectin





DIRECTIONS
In a large, stainless steel saucepan, combine green pepper, white vinegar, and white sugar!. Bring to a boil, and cook for 6 minutes, stirring constantly!.
Stir in liquid pectin, and continue to boil for 3 more minutes, stirring constantly!. Skim off foam with a metal spoon, and remove pan from heat
Ladle jelly into sterilized jars, leaving a 1/2 inch space at the top!. Seal, and process in a boiling-water canner for 5 minutes!.Www@FoodAQ@Com
