Good coleslaw recipe?!
I went to a Mexican food restaurant the other day and they had coleslaw there that didn't have any mayo, just pepper, jalape?os and something else for the base!. It was soooo good but im not sure what all the ingredients are!. Anyone have that recipe or any other good coleslaw recipes!?Www@FoodAQ@Com

4 cups thinly sliced green cabbage (from about 1/2 large head)
1 red bell pepper, thinly sliced
1/2 cup chopped fresh cilantro
1 small jalape?o chili, seeded, minced
3 tablespoons olive oil
2 tablespoons fresh lime juice
1 1/2 teaspoons ground cumin
Combine cabbage, bell pepper, cilantro, and jalape?o in large bowl; toss to blend!. Whisk oil, lime juice, and cumin in small bowl to blend!. Pour dressing over cabbage mixture!. Season to taste with salt and pepper!. (Can be made 2 hours ahead!. Cover and refrigerate!. Toss before serving!.)

Jalapeno Coleslaw

6 cups shredded cabbage or coleslaw mix
2 medium fresh tomatoes, seeded and chopped
6 green onions, coarsely chopped
2 jalape?o peppers,* finely chopped
1/4 cup cider vinegar
3 tablespoons honey
1 teaspoon salt
Combine cabbage, tomatoes, green onions, jalape?o peppers, vinegar, honey and salt in serving bowl; mix well!. Cover; chill at least 2 hours before serving!.
Stir well immediately before serving!.
Tip: For a milder coleslaw, discard the seeds and veins when chopping the jalape?os, as this is where much of the heat of the peppers is stored!.Www@FoodAQ@Com

You can buy the preshredd cabbage mix or thinly slice a head of cabbage!.
Add:
grated carrot (even if it's in the mix)
1 sm!. grated onion
celery seed (important ingredient!.!.!. several shakes of the container)
Mayo
apple cider vinegar
pinch of sugar
milk
Put cabbage in a bowl, add celery seed, grated carrot & onion
Add about 1/8 cup vinegar
A little bit of milk
Then start mixing the mayonnaise in until it's the desired amount!.!.!. all is coated well!. You can add a little more milk to thin it out a bit if it's too creamy!. I think the milk is what will make the difference for you since you don't like it too creamy!. I'm not all that much about measuring, more because I've been making it so long, I can make a pretty educated guess!. Eventually you learn to adjust the mayo/ vinegar/ milk to desired taste & consistency!. Even the sugar can be adjusted, but don't leave it out!.

You can use sour cream instead of mayo, or just make a vinaigrette dressing with olive oil & vinegar!. I like lots of chopped fresh cilantro in coleslaw too (get bags of shredded coleslaw cabbage); and add some thinly sliced onions and sliced or chopped jalapenos!.!.!.!.!. If you can find any of the El Torito cilantro salad dressing, you could use that instead of any other dressing on it!.!.!.!.!.!.Www@FoodAQ@Com

This is very easy to make and goes very well with any kind of grilled Tex -Mex meat!.
It can also be used as topping for a tostada salad along with some chopped tomatoes and avocados!.

My fiance makes it with a touch of mayo, not much at all, and adds pickle juice and wasabi, and a little salt and pepper!.!.!.it's the best coleslaw in the free world!! You actually could leave out the mayo too, if you don't like it!. He sometimes does!.Www@FoodAQ@Com
