I am in a baking mood and I have a sweet tooth and as mentioned above: 12 juicy delicious peaches!.

Well, since it's summer, I recommend peach melba!.

Skin the peaches by dipping them in boiling water for about 1 minute, then dropping into ice water!. When cool, peel off the skins!. Run a sharp knife all the way around the peach, then twist the halves to separate them!. Remove the pits!. If the peaches are too ripe for this, then slice them off the pit!.

Simmer the peaches for 2-3 minutes in a syrup of water and sugar!. Let them cool in the syrup!.

Puree 1 lb!. of fresh or frozen (thawed) raspberries and strain out the seeds!. Taste the puree and sweeten to taste if necessary!.

Serve the peaches over vanilla ice cream, topped with the raspberry coulis (coo-LEE)!. Serves 4-6Www@FoodAQ@Com

Cook Time: 50 minutes
Ingredients:

* 1/4 cup butter, softened
* 1/2 cup brown sugar, packed
* 1 1/2 cups canned peach slices, drained
* 6 maraschino cherries, halved
* 1/3 cup shortening
* 1/2 cup sugar
* 1 egg
* 1 1/4 cups sifted cake flour
* 1 1/2 teaspoons baking powder
* 1 1/2 teaspoons salt
* 1/2 teaspoon grated orange peel
* 1/2 cup orange juice

Preparation:
Spread butter in bottom of 8-inch round cake pan and sprinkle with brown sugar!. Arrange peaches and cherries on brown sugar!. Cream the shortening and sugar in a mixing bowl!. Add the egg and beat well!. Sift the flour, baking powder and salt together; add to creamed mixture alternately with mixture of the orange peel and juice!. Pour batter over peaches, taking care not to disturb fruit!. Bake at 350° for 45 to 50 minutes, or until a wooden pick or cake tester inserted in center comes out clean!.!. Cool for 10 minutes!. Invert over serving plate and remove cake pan!.
Makes 6 to 8 servings!.

Ingredients:

* 1 can peaches in syrup, about 29 ounces (can size 2 1/2)
* 1/2 cup sugar
* 1 beaten egg
* 1/4 cup butter
* few drops lemon juice
* biscuit dough topping, below

Preparation:
Mix peaches, sugar, egg, and lemon juice!. Place in a buttered baking dish, dotting with butter!. Cover with a top of rolled out biscuit dough and bake at 450° until top is lightly browned!. [about 15 to 18 minutes] Serve plain or with cream and sugar or hard sauce!.

Biscuit Dough

* 1 tablespoon shortening
* 1 cup flour
* 2 1/2 teaspoons baking powder
* 1/4 teaspoon salt
* 1/2 cup milk

Mix dry ingredients; cut shortening in with pastry blender or knives!. Add milk gradually to make a soft dough!. If too soft, add a little more flour!.

Ingredients:

* 1 cup sugar
* 1 tablespoon butter
* 2 cups hot water
* 2 to 3 cups fresh sliced peaches, or frozen thawed
* 1 cup flour
* 2 teaspoons baking powder
* 1/2 teaspoon salt
* 1 tablespoon sugar, optional
* 1/2 milk or cream, more or less
* cinnamon sugar, optional

Preparation:
In a medium saucepan over medium heat, combine 1 cup sugar, butter, and hot water!. Add peaches and bring to a boil!. In a medium bowl, combine flour, baking powder, salt, and 1 tablespoon of sugar, if using; stir in milk or cream to form a stiff batter!. Drop large spoonfuls of batter onto the boiling fruit!. Cover and cook for about 20 minutes!. Spoon out dumplings and fruit into bowl!. If desired, sprinkle with a little cinnamon sugar and serve with cream or ice cream!. Serves 4 to 6!.

Ingredients:

* 2 1/2 pounds fresh peaches, peeled, pitted
* 1 cup sifted all-purpose flour
* 1 cup sugar
* 1/4 teaspoon salt
* 1/2 teaspoon cinnamon
* 1/2 cup soft butter

Preparation:
Butter an 8-inch square baking dish!. Preheat oven to 375°!.
Slice peeled, pitted peaches into the prepared baking dish!. Sift together the flour, sugar, salt and cinnamon into a medium bowl!. Cut butter into flour mixture with pastry blender until mixture resembles coarse meal!. Sprinkle crumbs evenly over peaches in baking dish!. Bake at 375° for 45 to 50 minutes, until topping is golden brown and peaches are tender!. Serve peach crisp warm with cream or whipped topping!.

Peach Cobbler

Ingredients:
4 cup peeled, sliced peaches
2 cup sugar, divided
1/2 cup water
8 tablespoon (1 stick) butter
1 1/2 cup self-rising flour
1 1/2 cup milk
ground cinnamon, optional

Directions:
Preheat oven to 350 degrees!.

Combine the peaches, 1 cup sugar, and water in a saucepan and mix well!. Bring to a boil and simmer for 10 minutes!. Remove from the heat!.

Put the butter in a 3-quart baking dish and place in oven to melt!.

Mix remaining 1 cup sugar, flour, and milk slowly to prevent clumping!. Pour mixture over melted butter!. Do not stir!. Spoon fruit on top, gently pouring in syrup!. Sprinkle top with ground cinnamon, if using!. Batter will rise to top during baking!. Bake for 30 to 45 minutes!.

Easy Peach Cobbler
1cup white sugar
1/2 cup butter, room temperature
1 cup self-rising flour
1 cup milk
1 (15 ounce) can peaches (or equivalent of fresh peaches, blanched to remove skins)

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C)!.
In a one-quart baking dish or 9 inch square pan, cream together sugar and butter!. Mix in flour and milk until smooth!. Pour peaches and their juice over the top!.
Bake 25 to 30 minutes in the preheated oven, until golden brown!.




Peaches and Cream Pie

1 1/2 cups all-purpose flour
3/4 cup butter, softened
3/4 cup chopped pecans
1 tablespoon white sugar

1 (8 ounce) package cream cheese, softened
2 cups frozen whipped topping, thawed
1 cup confectioners' sugar
1 1/2 cups white sugar
4 tablespoons cornstarch
3 cups warm water
2 (3 ounce) packages peach flavored gelatin mix
5 fresh peaches - peeled, pitted and sliced
1 (12 ounce) container frozen whipped topping, thawed


DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C)!. Lightly grease a 9x13 inch baking pan!.
In a medium bowl, mix together flour, butter, pecans and 1 tablespoon sugar!. Press mixture into bottom of baking pan!.
Bake in preheated oven for 15 minutes!. Remove from oven and let cool!.
In a large bowl, beat together cream cheese and confectioners' sugar until smooth!. Gently stir in the 2 cups whipped topping!. Spread over cooled crust!. In a small bowl, stir together the 1 1/2 cups sugar and cornstarch!. Pour the sugar mixture into a saucepan and stir in the 3 cups water!. Cook over medium heat, stirring frequently until clear and thick!. Stir in gelatin and remove from heat!.
Combine the gelatin mixture with the peaches!. Spread entire mixture over cream cheese layer!. Top with 12 ounce container of whipped topping!. Cover and refrigerate for an hour!.

Peach Upside down cake
INGREDIENTS (Nutrition)
1/4 cup butter
1/2 cup packed light brown sugar
1/4 teaspoon ground nutmeg
5 fresh peaches - peeled, pitted and halved
1/2 cup butter, softened
1/2 cup white sugar
1 egg
1 1/4 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup milk

DIRECTIONS
Melt 1/4 cup butter or margarine in an 8 inch square pan!. Sprinkle with brown sugar and nutmeg!. Arrange peach halves, cut side down, in pan!.
In a large bowl, cream the butter and sugar until light and fluffy!. Beat in egg!. Stir together flour, baking powder and salt!. Add flour mixture to creamed mixture alternately with milk, beating well after each addition!. Spread batter over peaches!.
Bake at 375 degrees F (190 degrees C) for 35 to 40 minutes, or until lightly browned on top!. Remove cake from oven, and let stand in pan for 5 minutes; invert onto serving platter!. Serve with whipped cream!.

My in laws had so many Peaches this year their tree split!.!.!.!.these are 2 old family recipes both of which I have made this week(besides Preserves)


Beehive peaches

4 peaches
pie crust for 2 pies
1 stick butter
1 egg
2 cup powdered sugar
1tsp Almond extract
Nutmeg

clean and dry peaches and set aside
Lay out pie crust and slice into 1 inch strips
Wrap each peach with strips of pie crust!. from bottom up!.!.to resemble a bee hive!.!.!.bake for 40 mins at 375
While the peaches or cooking combine melted butter ,egg, sugar,almond extract and nutmeg to taste!.
When peaches are done remove each to a small bowl!.!.!.pour sauce over each peach and serve!.


Peach pie Special

1 stick butter
1 egg
1 C sugar
1/3 C flour
1/2 tsp Vanilla
5 or 6 peaches sliced!.!.!.!.can use large canned peach halves

place peaches in the bottom of a pie shell!.!.!.combine remaining ingredients and pour over peaches!.!.!.bake at 350 for 1 hour!.!.!.!.This is a seriously good pie!.!.!.great with ice creamWww@FoodAQ@Com

Skillet Peaches A La Mode

preheat oven 375 F

1 pre-made pie crust (frozen) lay out flat on cookie sheet, sprinkle with sugar cut into 1-inch strips and cook for about 10 minutes in oven, or until slightly browned!.


1/3 cup butter
6 to 8 peaches, pitted halved or quartered
1/4 cup peach or apricot nectar
2 TBSP, packed brown sugar
1 cup fresh raspberries or blueberries
Fresh mint leaves (optional)
Vanilla Ice Cream

1!. Melt butter in 12-inch skillet over Med-Hi heat!. Add peaches, skin side up!. Reduce heat to medium; cook 4 to 5 minutes, turning once!. Remove peaches to bowls!. Add nectar and brown sugar to skillet!. Cook and stir over medium heat 1 to 2 minutes or until sugar is dissolved and syrup forms!.
2!. Spoon syrup on peaches!. Top with berries, mint, and sugared pastry!.
Serve with Ice Cream!.

2 16 oz!. cans sliced peaches in syrup
1/2 cup sugar
2 tablespoons butter
2 tablespoons flour
1/4 teaspoon ground nutmeg
1 tablespoon fresh lemon juice
2 pie crusts (top and bottom)
cinnamon sugar

Preheat oven to 400°F degrees!. Drain peaches, reserving 1/3 cup syrup!.
In a saucepan, mix together sugar, flour, nutmeg and a pinch of salt!. Add reserved syrup and cook, stirring constantly, over medium heat until mixture becomes thick and bubbly!.

Add butter, lemon juice and peaches!. Remove from heat and allow to cool!.

Meanwhile, line a 9 inch pie dish with pie crust; fill!.

Using a wavy-edged pastry wheel, cut upper pastry crust into lattice strips (optional)!. Put lattice strips on top of filled pie and dust with cinnamon sugar!.

Bake at 400°F degrees 40 to 45 minutes until golden brown!.

Serve with vanilla ice cream topped with peach syrup or garnished simply with a sprig of fresh mint!.
