Answers:
I watch a lot of Martha Stewart and try out her recipes and they are always great! In most of her baked chicken recipes, the skin is left on and salt/pepper is sprinkled on skin!. Baked on just a cooking sheet!. The skin acts as a tent to hold in juices, leaves chicken moist! You can quarter up some potatoes, preferably red potatoes, place around chicken on cooking sheet (also salt/pepper them too) The broth from the chicken melds with the potatoes and it tastes divine!. I am posting link!. Good luck!.

Lemon-Roasted Chicken with Arugula Salad and Dilled Orzo from The Martha Stewart Show
Ingredients
Serves 4!.

1 chicken (3 1/2 pounds), cut into 10 pieces
6 cloves garlic, smashed
2 lemons, quartered
1 teaspoon dried oregano
3 tablespoons plus 1 teaspoon olive oil
Coarse salt and freshly ground pepper
1 cup orzo
1/2 teaspoon dried dill
2 tablespoons red-wine vinegar
3 bunches arugula (12 to 16 ounces total), thick stems removed, washed well
Directions
Preheat oven to 450 degrees!. Bring a large saucepan filled with water to a boil over high heat!.
On a large rimmed baking sheet, toss together chicken, garlic, lemons, oregano, and 1 teaspoon oil; season with salt and pepper!. Roast chicken, skin-side up, until golden and cooked through, 25 to 30 minutes!.
Meanwhile, generously salt boiling water!. Add orzo, and cook until al dente; drain well, and return to saucepan!. Add dill and 1 tablespoon oil; season with salt and pepper, and mix gently to combine!.
In a large bowl, whisk together vinegar and remaining 2 tablespoons oil; season with salt and pepper!. When chicken and orzo are ready, add arugula to bowl; toss to coat!. Drizzle chicken with pan juices, and serve with quartered lemons, orzo, and arugula salad!.

Chicken Casserole
2 lb Boneless chicken, diced
2 Eggplant, chopped
2 Zucchini, chopped
2 Potatoes, chopped
1/2 lb Green beans, sliced
1 Carrot, chopped
2 Tomatoes, chopped
4 Green peppers, chopped
1/2 C Olive oil
1 T Tomato paste
Salt & Black pepper
Place all the ingredients in a casserole!. Add water and stir!.
Cook at medium heat for 45 minutes!.
Serves 4!.

(Use whatever you have at hand)

Pasta is a good one, all you need is noodles, and sauce!. Boil noodles in a pot then add sauce and maybe some olive oil!.Maybe a chicken salad, or a salad would be easy to make as well!. All you need is lettuce, dressing, and a few extra ingredients like cucumbers, or tomatoes, or chicken!. :)

Basic chili
in a large pot, saute a sliced large onion and green pepper if you have it!. Add ground beef or turkey or chicken or chopped meats or even turkey sausage!. Add chili powder, cumin(if you have it) red pepper, parsley, cilantro!.!.!.Add some kind of tomato product and a couple of cans of rinsed beans and water if wanted!. Serve plain, with cheese, over rice or pasta!. If I don't have meat, I add more veggeis and have a vegetarian chili!.Www@FoodAQ@Com

Here are some ideas you might enjoy:

1!. Chicken and stuffing: 4-6 boneless, skinless chicken thighs; 2 boxes Stouffers Cornbread stuffing mix; 1 jar chicken gravey; 1/2 cup sour cream; 3 T butter!. Season chicken with seasoned salt and pepper!. Sear in non-stick pan over medium heat!. Cover and reduce heat!. Simmer for 20 minutes!. Remove from pan and set aside!. Add 3 T butter and 1 1/2 cups to 3 cups water or chicken broth to pan!. Bring to a boil!. Add stuffing mix(s) and stir to moisten!. Top with chicken!. Mix sour cream with gravey and spoon over the top of chicken!. Cover!. Simmer until heated thru!. Serve with green beans and roasted sweet potatos!.
2!. Meatloaf: 2 lbs lean ground beef; 2 T Worcestershire sauce; 1/2 tsp garlic powder; 1 yellow onion, diced; 1 can diced tomatos; 1 T kosher salt; 1 tsp fresh ground pepper; 2 eggs; 1 cup bread crumbs; 1/2 cup ketchup, 1 T dijon mustard; 2 T brown sugar!. Mix meat wtih next 8 ingrediants!. Mix ketchup with mustard and brown sugar and spoon over the top!. Cover and bake at 350 degrees for 1 hour!. Serve with sour cream mashed potatos and asparagas!.
3!. PorkChop Casserole: 4-6 bone in, thin porkchops, 2 boxes Kraft Mac and Cheese, 1 yellow onion, cut into rings, 1 T yellow mustard, 1 3 oz package cream cheese, seasoned salt, fresh ground pepper!. Season porkchops with salt and pepper!. Saute in hot oil until seared on all sides!. Remove from pan and add onion!. Saute until carmelized!. Cook mac and cheese according to package directions, adding mustard and cream cheese!. Place in baking dish!. Top with chops and place a portion of onion on each chop!. Cover and bake at 350 degrees for 45 minutes!. Serve with chopped salad and fresh fruit!.Www@FoodAQ@Com

3 pound roast
2 cans of golden mushroom soup
1 onion sliced
place roast and onion in large pot!.!.!.add soup diluted as directed!.!.!.bring to a boil!.!.!.reduce heat to a simmer and let cook 3 hours!.!.!.serve with mashed potatoes!.

4 chicken thighs with skin removed
2 cans cream of chicken soup
1 can mixed veggies or frozen stew veggies!.

place thighs in large pot and cover with soup that has been diluted as directed!.!.!.cook for 90 minutes add veggies and cook 15 minutes more(30 if using frozen veggies)!.!.serve with rice or noodles!.
