My banana bread is browning on the top to fast and is still smushy in the middle what to do ?!

The oven temperature is to high!. Your dial which set the temp!. may be out of calibration and setting it low might actually get you the correct setting!.
Purchase an oven thermometer to verify your cooking temperature!.
You may also want place a piece of aluminum foil on the top of the loaf to reduce the browning!. Just lay it on top of the pan when you place it in the oven!.Www@FoodAQ@Com

if its getting to the point of burning!.!.!.!.take it out!.!.!.
allow it to cool enough to remove it from the pan!.!.!.
microwave it!.!.!.
this will remove the external dry heat (which is causing it to burn or brown), and cook it from the inside via microwave!.!.!.!.

Its probably a heat issue!.
Try lowering it by about 25 F, and if that doesnt work then you can go for the foil!.
But the foil cant do too much about it!. If its super mushy in the middle right now, then it probably needs lower heat!.Www@FoodAQ@Com

mmmmm!.!.!.!. eat the gooey banana bread with a big scoop of vanilla ice cream!. Save some for me, I'm grabbing a spoon!.

Turn the oven down about 25 degrees!. The bread will continue to cook, but the browning will slow way down!.
When I bake it in a loaf pan, my banana bread usually takes just over an hour to bake!. I bake it at 325 degrees!.

lower the temp of the oven a bit (25-50o)

Make sure that you have the banana bread in the middle of the oven (middle rack) and cover the top with tin foil!. That should do it!. Www@FoodAQ@Com
350 degrees for 1 hour!. Perhaps you need to buy a oven thermometer to check to see that your oven is heating to the right temp!.Www@FoodAQ@Com
