A big Meatloaf Mistake?!
I put my meatloaf in the oven about 20 minutes ago, and have noticed that I forgot to put in the breadcrumbs (pregnancy brain)!. I've NEVER done this!. How detrimental is it to the final product!? Www@FoodAQ@Com

It will be more like the consistency of a hamburger, and less like a that of a meatball!. (let's face it, a meat loaf really is just an oversize meatball!)
The breadcrumbs are there to make it lighter and more moist!. They help soak up and lock in all those wonderful juices like millions of tiny sponges!.!.!. This leads to the increased tenderness and juiceyness!. The egg is there to hold it all together!. (Though it also goes a long way to helping that wonderful meatloaf 'crust' to develop!.)
It won't be any less edible with out them, just different!. You may even like it better!Www@FoodAQ@Com

My mom makes the best meatloaf ever and she has never, ever used bread crumbs!. As long as you added the eggs and let the meat loaf sit for about 10 minutes, it should slice up fine!. It may be a bit crumbly, but not overly so!. Www@FoodAQ@Com
I'm sure it will be fine but probably dry ,contrary to what people think the breadcrumbs first stretch the meat to go further and second helps in not drying the product Www@FoodAQ@Com
