I found mussels at the beach and would like to make a meal from them!.!. Right now they are cooling in water in the fridge!.Www@FoodAQ@Com

Answers:
NB - VERY IMPORTANT - Check on the internet to make sure the beach you found your mussels is a safe beach!. Some are polluted!. I would check very very carefully before I ate mussels from a beach!. also, you shouldn't store them in water as they will drown!. Just put a damp cloth over them!.

If you still want to proceed!.!.!.

the simplest way :

clean mussels (discard any that are open and don't close when you tap them against a surface)
fry some onions and garlic until soft!.
add some white wine and bring to the boil!.
Add mussels (cleaned) and cover with a lid for a couple of minutes!.
As soon as mussels open, remove from cooking liquor and put in warmed bowls!. Discard any that don't open!.
Reduce liquor by half (add parsley and cream if desired) and spoon over the cooked mussels!.Www@FoodAQ@Com

Steamed Mussels!.
30 g butter
40 g shallots, minced
180 ml dry white wine
1360 g mussels, cleaned and debearded
30 g chopped fresh parsley
ground black pepper to taste
DIRECTIONS
In a medium stock pot, heat butter over medium heat!. Add shallots and saute until translucent!.
Pour in wine and mussels!. Raise heat to medium/high and steam mussels until shells open, about 5 minutes!.
Pour mussels and cooking liquid into a serving bowl, sprinkle with parsley and freshly ground black pepper to taste!. Serve immediately!.

Only cook the ones you have found if you are 1,000 percent positive they are free from contamination!.Www@FoodAQ@Com

when I was a little girl, we made meals out of clams, mussels,ect--wherever we found it!. Nowadays, with pollution, I wouldn't do it!. The waters should be certified that they are clean!. Nowadays, you usually need a license, too!.

However, If you do know they are from clean certified waters, you shouldn't keep them submerged in water!. They just need to be kept cold in fridge!. When ready to use, scrub the outsides with a brush and carefully and firmly pull the beard from the mussles!.

To cook,
I start off w/ olive oil and lots of garlic in a large pot!. Cook until garlic is tender, add 1 cup of white wine, tbl of dried parsley and a can of diced tomatoes and let cook down for a bit!. Add mussels to pot, cover and let cook until mussels open!. Discard any that didn't open!. Serve in a wide shallow bowl with bread!. Add more parsley and black pepper!.

If mussels open in fridge before cooking, check to see if they're dead by rubbing between your hands!. If they close, then they are okay!. Any that remain open, discard!.Www@FoodAQ@Com

You can steam them like clams and you'll know they're done when they open (some won't)!. My uncle use to make the best mussels!.!.!.!.if I remember correctly, on the bottom pot where you'd usually place the water to steam, he'd use beer, little salt & pepper, garlic and a few other spices (can't remember)!.!.!.!.I am not kidding you!.!.!.!.they were the best! I'm not a beer drinker, so I wasn't to keen on trying them, but I couldn't stop eating them!.

Add** Sorry!.!.!.!.I just remembered he'd cook the mussels right in with the beer and spices!. He'd bring it to a boil and drop them in until they opened!.Www@FoodAQ@Com
