Answers:
I used to make pea soup all the time!.

Start with 2 parts water to 1 part peas!. Bring to a boil and let sit for an hour!. Bring to a boil again and then set your dial to 3!. After another hour it should be done Use a heavy pot!.

I made my pea soup with onions, kielbasa, carrots and Poupon whole grain dijon mustard!. One pound each with about 1/4c mustard, then Salt and pepper!. I often use more water than necessary to prevent burning and then use mashed potato flakes to thicken!. It will always thicken once you let it sit long enough!.Www@FoodAQ@Com

Since every stove is a bit different, here's what I suggest!. Fill your pan about half-way with hot water!. turn your stove to 4 or 5!. Just when you begin to see small bubbles forming and floating to the top, turn the heat down to 2!. Add in your vegies!.

The water should again heat up enough to begin making the small bubbles!. If it begins boiling too much adjust the temp down a bit, it after 5 or 10 minutes, it is still not making the tiny bubbles, turn it up 1 more number!.

NOTE: if you are to "cover and simmer" you can put the stove on a lower setting than if you are to "simmer uncovered"!. also be aware that if you simmer uncovered, you may need to add extra water on occasion!. Water level should always be just above the vegies you are simmering, not below!.Www@FoodAQ@Com

Unless they're DRIED green peas, you shouldn't be simmering anywhere near 2 hours! !.!.!.!. 2 or 3 should be right for simmering; 1 would just be to keep something warming!.!.!.!.!.!.Www@FoodAQ@Com

I always bring it to a boil at 9, then put a lid on and turn it down to 3 or 4!. That seems to be a decent simmer!.Www@FoodAQ@Com

Set on 2 and cover pot to simmer!.!.!.Www@FoodAQ@Com

set to 4 and cover potWww@FoodAQ@Com
