Low-fat Lemon Bars -
3 tablespoons unsalted butter, softened

or try

Sour Cream Lemon Shortbread Bars - no butter
The base is a light and tender shortbread cookie, which crumbles gently into your mouth and retains some crispness in spite of the moist topping!. The topping is just thick enough to hold together well and has a bright, but not overly tart, lemon flavor!. In fact, the flavor is tempered by the addition of some sour cream, which gives the bar a great mouthfeel!.Www@FoodAQ@Com

Here is a quick and easy recipe that my family loves!. Just take a lemon pudding cake mix and a can of lemon pie filling, mix together, put in jelly roll pan, bake at 350 for 20-25 min!. You can either sprinkle with powdered sugar or make a lemon flavored glaze for them!. Easy & delicious! Good luck!Www@FoodAQ@Com
