Answers:
Spinach Salad with Hot Bacon Dressing
Dressing
1/2 lb!. bacon, cooked crisp, fat saved, chopped coarsely
1/4 c!. shallots, chopped fine
1 Tbsp!. bacon fat
1 tsp!. black peppercorns, fresh ground
1/4 c!. olive oil, extra virgin
1/2 c!. sherry wine vinegar
1/4 c!. granulated sugar
1 Tbsp!. Dijon mustard
Salad
8 c!. fresh baby spinach, trimmed and washed
2 each eggs, hardboiled, yolks and whites separated and chopped fine
Dressing procedure:
Sweat the shallots, bacon fat and peppercorns in a medium saucepan over medium heat until the shallots are transparent!. While over the heat, whisk in the olive oil, vinegar and sugar!. Increase the heat to high and whisk until the sugar dissolves completely!. Whisk in the Dijon mustard until completely dissolved!.
Salad procedure:
Toss dressing with the spinach just before serving!. Plate and garnish with the chopped eggs!.

Spinach Salad Supreme

INGREDIENTS:
1/4 cup vegetable oil
2 tablespoons red wine vinegar
or cider vinegar
1 teaspoon sugar
1 teaspoon finely chopped
onion
1 teaspoon finely chopped
green pepper
1 teaspoon minced fresh parsley
1 teaspoon ketchup
1/4 teaspoon salt
1/4 teaspoon ground mustard
1/4 teaspoon paprika
2 cups torn fresh spinach
1 hard-cooked egg, sliced
3 bacon strips, cooked and
crumbled

DIRECTIONS:
1!. In a jar with a tight-fitting lid, combine the first 10 ingredients; shake well!. Divide spinach between two serving bowls or plates; top with egg and bacon!. Drizzle with dressing!. Serve immediately!.


Fresh Spinach Salad

INGREDIENTS:
1/2 cup white sugar
1/2 cup white vinegar
1 cup vegetable oil
2 tablespoons Worcestershire
sauce
1/3 cup ketchup
1 small onion, chopped 5 slices bacon
3 eggs
1 pound fresh spinach - rinsed,
dried and torn into bite size
pieces
1 (4 ounce) can sliced water
chestnuts, drained

DIRECTIONS:
1!. In a blender or food processor, combine sugar, vinegar, oil, Worcestershire sauce, ketchup and onion, and process until smooth!. Set aside!.
2!. Place bacon in a large, deep skillet!. Cook over medium high heat until evenly brown!. Drain, crumble and set aside!.
3!. Place eggs in a saucepan and cover with cold water!. Bring water to a boil and immediately remove from heat!. Cover and let eggs stand in hot water for 10 to 12 minutes!. Remove from hot water, cool, peel and chop!.
4!. In a large bowl, toss together the spinach, water chestnuts, bacon and eggs!. Serve with the dressing!.


Super Easy Spinach and Red Pepper Salad

INGREDIENTS:
1 (6 ounce) package baby
spinach
1 red bell pepper, chopped
1/2 cup grated Parmesan cheese
1/4 cup olive oil
1/4 cup rice vinegar

DIRECTIONS:
1!. In a large bowl, mix the baby spinach, red bell pepper, and Parmesan cheese!.
2!. In a small bowl, mix the olive oil and rice vinegar!. Toss with the baby spinach mixture, and serve!.

MANDARIN ORANGE/SPINACH SALAD
1-2 pkg!. fresh spinach
1/2 head iceberg lettuce
1-2 (11 oz!.) cans whole segment mandarin oranges in lite syrup
1 (10 oz!.) Minute Maid frozen "reduced acid" orange juice
1 to 1 1/2 c!. almonds (whole, sliced or slivers)
1 pkg!. Good Seasons Italian dressing mix
2 tbsp!. low sugar orange marmalade
2 c!. (16 oz!.) water
Wafer thin slices purple onion
Thinly sliced green bell pepper
Thinly sliced red bell pepper
Wafer thin slices cucumber with peel
Mrs!. Dash "Table Blend" (optional)

SALAD: Drain oranges, set aside syrup!. Wash and dry spinach and lettuce!. Cut up half of spinach and half of lettuce!. Place whole leaves of spinach and whole leaves of lettuce in individual salad plates or bowls!.
Add cut-up leaves!. Garnish with cucumber, red and green bell peppers, onion and orange slices!. Sprinkle with almonds!. Chill until ready to serve!.
Before serving, sprinkle with Mrs!. Dash "Table Blend, " then add dressing!.

SALAD DRESSING:
In a quart jar with lid, add Good Seasons Italian dressing mix, thawed orange juice, water, syrup from mandarin oranges and marmalade!. Shake vigorously!. Pour into cruet and chill!. Shake vigorously again before pouring over salad!.



SPINACH SALAD & DRESSING (this is very simple)
1 lb!. fresh spinach
3 hard cooked eggs
6 strips bacon
1 lg!. red onion
Mushrooms (opt!.)

DRESSING:
1 egg yolk
1 tbsp!. sugar
1 1/2 tsp!. paprika
1 tbsp!. Worcestershire sauce
1/2 tsp!. salt
1/4 tsp!. dry mustard
1/4 tsp!. pepper
3/4 c!. salad oil
1/4 c!. wine vinegar

Wash and dry spinach; chop eggs finely!. Cook bacon until very crisp; crumble!. Slice onion thinly!.
For dressing, mix egg yolk with seasonings and mix until smooth!. Slowly add oil (about 1 tablespoon at a time)!. Slowly add vinegar!. Toss with salad!.

I wish I had the exact recipe but at thanksgiving we had an awesome spinach salad!. This frist one is a little more winter-y but keep it in mind for later on in the year!.

Spinach
Blue Cheese crumbles (I prefer feta to bc)
Pomagrante "seeds" what are they other than little juicy jewels!?!?!?!?
And a very light coat of itallian or balsmaic vin on top!.!.!.!.mmmmmm

This next one is so very very very good and it even stays fresh the next day if you dont; get around to eating it all!.

5 oz of baby spinach rinsed and patted dry
? cup buttermilk
2 tbsp sour cream
1 tbsp honey
1 tbsp apple cider vinegar

Mix the buttermilk, sour cream, honey and cider vinegar!. Toss in teh apples, grapes, and spinach!.Www@FoodAQ@Com

In my opinion!.!.!. go grab a bag of pre-washed spinach, or baby spinach, then add some feta cheese, a handful of sundried tomatoes, some pine nuts, cooked asparagus, and maybe some celery or cucumber!.!.!. it quick and easy-- top it with some balsamic vinagrette, or try this!.!.!. melt down some butter, add about a tablespoon of spicy brown mustard, some garlic powder and a little fresh pepper-- mix together, it is deliciousWww@FoodAQ@Com
