Gajar ka Halwa

This Indian recipe is a carrot and milk pudding!.
Enjoy cooking Indian!

Grated carrot 1 kg
Milk 1 litre
Whole dried milk (mawa) 200 grams (you can use ricotta instead)
Sugar 2 cups
Ghee 2 tbsp!. (clarified butter)
Dry fruits (sliced almond and cashew nuts, raisin ) 1/2 cup
Cardamom powder 1/2 tsp!.

1!.Take milk and grated carrots in a heavy base kadhai / deep saucepan and bring it to boil!. Cook over medium heat until all the milk gets dried up!. You should stir the mixture occasionally to prevent any sticking!.
2!. Add sugar, cardamom powder, 1/4 cup dry fruits and continuously stir for 5-7 minutes!.
3!. Add ghee and mawa!. Stir well and fry on low heat until ghee starts separating!.
4!. Decorate with remaining dry fruits and serve hot!. (Optional- decorate with silver leaf)
5!. Add lemon juice and paneer pieces!. Mix well so that all the paneer pieces gets properly coated with sugar!. Allow it to cool!.

Kheer (Rice Pudding)

This Indian recipe is a traditional Indian sweet dish of rice boiled in sweetened milk!.

Rice 1/4 cup
Milk 1 litre
Sugar 4 tbsp!.
Cardamom powder 1/2 tsp!.
Sliced almonds and cashew nuts 1/4 cup
Raisins 2 tbsp!.


1!.Boil milk in a heavy base saucepan!.
2!. Add rice, cardamom powder, raisins and half quantity of sliced almonds and cashew nuts!. Bring one boil and then reduce the heat to medium!. Cook until it becomes thick and creamy!. Stir occasionally!.
3!. Add sugar and cook for 5 minutes!.
4!. Put kheer in a serving bowl and decorate with the remaining dry fruits!. Refrigerate and serve!.

Kulfi (Indian Ice-Cream)

6 cups creamy milk
9 cardamoms
2/3 cup sugar
1/4 cup chopped/sliced almond

Garnish
flakes of almond
cardamom seed

1!.Add Cardamom to milk and bring it to boil!.
2!. Reduce the heat and keep simmering the milk until it is reduced by one-third!.
3!. Take cardamom out of milk by using strainer!.
4!. Add almond and sugar!.
5!. Pour the mixture into container with lid!.
6!. Freeze until firm!. Stir the mixture every 30 minutes!.
7!. Remove from freezer 10 minutes before serving!.
8!. Serve by taking out of the container!.
