Question: When baking a cake, can I replace the milk with other liquids such as fruit juice!?

You can, but the texture will most likely be affected!. (also if the juice is highly acidic or has a high sugar content) Use half milk, sour cream or cream and half juice!. If it's a citrus fruit, use 3/4 milk and 1/4 juice and zest from the fruit used!.Www@FoodAQ@Com

I'm not positive but maybe water!.

Water works as a great substitute for milk in pancakes, and for the egg mixture to make omelettes and french toast!. I often do that when I'm running low on milk!. Www@FoodAQ@Com

I don't know about pound cake, but when making other cakes, I have used flavored soy milk!. Substitutions work well with some cakes!. Never tried fruit juice!.Www@FoodAQ@Com
