How do you make Juevos Con Chorizo?!


Question: How do you make Juevos Con Chorizo!?
My dad and I recently went to an authentic Mexican resteraunt and I had the dish, "Juevos Con Chorizo"!. I know it has some kind of sausage and eggs in it!. Could you please post the recipe!? Not a modified version though please I am looking for the authentic Juevos Con Chorizo!. THANKS!!!Www@FoodAQ@Com

1 ? lbs chorizo sausage

6 eggs

2 cans refried beans

8 flower or corn tortillas

tomatilla peppers

Jalape?o peppers

? onion, sliced

2 tomatoes, sliced

2 avocados, sliced

? cup cilantro

In a medium nonstick frying pan, add 2 tablespoons vegetable oil on medium heat!. Break up the chorizo sausage links and place in frying pan!. Continue to break down sausage with a spatula!. Heat on low heat because the sugar content in the sausage makes it very easy to burn!.

Meanwhile, in a bowl beat 6 eggs!. Slowly pour the eggs in the pan once the chorizo is brown!. Continue to stir the eggs with the chorizo until the eggs are evenly spread and cooked, but still moist!. Remove from heat!.

In a small pot, heat refried beans to serve as a side!. Note: Fresh pinto beans could be used instead, but take 3 to 4 hours to cook!.

Green Salsa

In a small pot, boil the peppers until they are soft!. Remove from pot, add 1/4 cup water and blend in blender until peppers are liquefied!. Add 1/2 cup cilantro to the blender for flavor!. Set aside in a small dish!.

Warm up the tortillas on a frying pan and assemble with onions, tomatoes and avacadoes!.
