Question: Chicago deep dish pizza issue
i made a chicago deep dish!.!.!.!.!.the bottom crust is soggy now!.!.!.!.(leftovers) the liquid from all the cheese and stuff made it soggy!.!.!.what should i do next time !?

Before you store the leftovers lay the pizza on paper towels to soak up any moisture!. Then reheat in a skillet on low to med heat until hot!. Www@FoodAQ@Com

I bake mine a little bit before adding the sauce and cheese and other goodies!. I always cook my ground beef before adding it to pizza!. I have a fear of the E!. Coli Bacteria, I've had several rounds of it this year and all from lettuce and ground beef!.
If you'll bake your pizza in a clay pan, it does much better than the metal ones!.
I bake mine in the bottom of a stoneware flower pot
(the saucer part)!.[ 15 inches diameter]
I found one for about $14!.95 at Lowe's!.
The Restuarant supply house wanted almost $50 for the identical pan!.Www@FoodAQ@Com

Did you assemble the pizza the Chicago way!? Meat and cheese on the bottom then topped with the sauce!? Try reducing your sauce before putting it over the pizza!. a Thick pizza sauce should not leave a watery soggy crust!. Although you cant keep any crust from left overs nice and crispy like when you first take it out of the oven!. I bake my Chicago pizza in a regular cake pan, they are the perfect depth and you can get them in 12" to 16" diameter sizes from any cake decorating or party supply store!.Www@FoodAQ@Com

Line your pizza pan with 2 halves of foil!. (overlap them)
They can be easily removed for longer baking/crisping!.Www@FoodAQ@Com

Place on a paper towel & a rack then wrap up the extras that way the moisture will pull all the way through with out leaving it soggy and moist!.
