Not all cheeses can be aged!.
Some cheeses are made to be consumed fresh or within a few weeks or months after they were produced!.
Brie being a prime example!.
But for the aged cheeses, they develop a more robust flavor with aging!.
Compare a piece of Red waxed Gouda with an aged Gouda and you would never believe they were the same cheese at one time!.
