What makes pancakes fluffy?!
I want my pancakes to be like Aunt Jemima's!. Is it extra baking soda that makes them so light and fluffy!? I've tried a million recipes that turn out good, but too dense!.Www@FoodAQ@Com

Whip the egg whites separately for extra light and fluffy pancakes, first!. Then fold in the egg whites!.

The answer is in the eggs!. Pancakes are just eggs, flour, milk, baking powder and salt!. I also like to add a little sugar, and a little vanilla or orange juice!. Start by separating your eggs!. Whip the whites separately until they are super fluffy!. You can use a whisk or even a blender if you want the extra clean-up!. In a separate bowl add your egg yolks to the other ingredients and mix well!. Then "fold" in the egg whites!. Now you're ready to cook!.Www@FoodAQ@Com
I think the fat content of the milk makes them fluffier!.
I typically replace half the milk with yogurt, and I noticed that when I use higher fat content milk and/or yogurt I get fluffier pancakes!. also if I use a dab less milk that happens also!.

Use a whisk, the whisk will add air to the mixture and air is what makes them fluffy!.Www@FoodAQ@Com
