Jumbo Breakfast Cookies


"Jumbo breakfast cookies are perfect for grabbing on the way out the door!. Feel free to substitute chocolate chips or dried cranberries for the raisins or any combination of the three for a little different twist!."


* 2 cups white sugar
* 1 cup peanut butter
* 1 cup butter or margarine
* 1/2 cup water
* 2 tablespoons vanilla extract
* 2 eggs
* 2 1/4 cups all-purpose flour
* 1 teaspoon baking soda
* 1/2 teaspoon salt
* 1 1/2 cups rolled oats
* 1 1/2 cups raisins
* 6 cups toasted oat cereal rings


Preheat the oven to 375 degrees F (190 degrees C)!.
In a very large bowl, mix together the sugar, peanut butter, butter, water, vanilla and eggs until smooth!. Combine the flour, baking soda and salt; stir into the batter!. Mix in the oats and raisins, then carefully stir in the cereal!. Drop 1/2 cupfuls of dough onto ungreased cookie sheets, spacing cookies about 4 inches apart!. Flatten cookies to 1 inch thick!.
Bake for 12 minutes in the preheated oven, until cookies are lightly browned at the edges!. Let stand on the cookie sheets for 5 minutes before removing to wire racks to cool completely!. Store at room temperature!. I like to put each cookie into a sandwich bag which makes them easy to grab on the way out the door!.

Ingredients
2 cups bran flakes, crushed (or substitute multi-grain flakes)
2 cups oatmeal
2 tablespoons wheat germ
1 1/2 tablespoons cinnamon
1/2 cup plain nonfat yogurt
1 cup unsweetened applesauce
1 teaspoon vanilla
1/3 cup honey
1 egg, beaten
1/2 cup skim milk powder
1 teaspoon baking soda
1 teaspoon baking powder
1/2 cup raisins
Directions
1 Preheat oven to 350°F!.
2 Crush cereal, and place in a medium-sized mixing bowl!. Add oatmeal, wheat germ, and cinnamon; set aside!.
3 In a medium mixing bowl, combine yogurt, applesauce, vanilla, honey, beaten egg, and skim milk powder: mix well to combine!.
4 Add baking soda and baking powder to the yogurt mixture!. Mix well!.
5 Gradually add the cereal and oatmeal mixture to the yogurt mixture and stir well!.
6 Add raisins and mix to combine!.
7 Scoop a heaping tablespoon of the batter and roll it into a ball!. Place onto a non-stick cookie sheet, or lined with baking parchment, and lightly flatten!.
8 Bake at 350°F for 15-18 minutes!. Makes 24 cookies!.

I know you said breakfast cookie, but this is an excellent healthier chocolate chip cookie recipe:

Ingredients:
1/2 Cup Whole Wheat Flour
1/2 Cup White Flour
1 Cup Oats
1/2 tsp!. Baking Soda
1/2 tsp!. Baking Powder
2 oz!. Tofu
1/4 Cup Butter (try Smart Balance)
1/4 Cup Sugar
1/4 Cup Brown Sugar
6 Packets Splenda (or to taste)
1/8 Cup Olive Oil
4 oz!. Chocolate Chips
2 tsp!. Flax Seeds
1/4 tsp!. Salt
1 tsp!. Vanilla

Heat oven to 375 and grind up oats in a food processor or blender until you have a fine powder consistency!. Mix together with whole wheat flour, white flour, baking soda and baking powder!. In a separate bowl, mix butter and tofu and beat until desired consistency!. Mix all sugar into bowl along with oil and vanilla and beat again until consistent texture!. Stir in flour mixture, flax seeds, salt, and chocolate chips and mix well!. Spread into small balls onto a baking sheet (coated with olive or canola oil spray) and bake for about 10 minutes, or to desired level of brown!.

Makes about 30 cookies!.
