Question: Why it boiled Okra slimy!?
Why is it when you Boil Okra it gets all slimy :) I Love it and all, but just i wounder about it :PWww@FoodAQ@Com

When the pods are cut, they exude a mucilaginous (thick and sticky) juice that is an excellent thickener for stews and soups, especially Créole Gumbo!. Www@FoodAQ@Com

I am a former chef and to remedy that blanch it quickly and cool in ice water, then saute it fast with onions,garlic and fresh tomato and at the last minute add some vinegar and a dash of file powder (ground sassafrass leaves)!.

The file breaks up the mucus like exchange and it will not be slimey, I learned this from a Chef in New Orleans!.Www@FoodAQ@Com

When Okra is cut open a sticky substance is released, it's useful for soups!. You should avoid okra that is soft, wet, has dark spots on the skin, and soft stems!. To help eliminate this just simply rinse the okra first before cooking!.

Boiled okra does get slimy!. They use it a lot in gumbos in Louisiana and Texas!. Have you every eaten it fried!? So good!. Dip in egg and milk, then corn meal and deep fry!. Delicious!. Www@FoodAQ@Com
