My turkey was always dry too so I tried the brining method!. It didn't make the turkey moist for me and it was a lot of work!. So my friend suggested trying a roasting bag!.!.!.!.and it worked beautifully! So simple too!
Buy a turkey size roasting bag by Reynolds!.Just put a tablespoon of flour into the roasting bag, shake!. Put a few cut up onions into the bag!. Place turkey on top of the onions in the bag after cleaning the bird and patting dry!. Tie up the end of the bag; put 6 small holes in the bag and place into the oven according to the roasting chart that comes with the bag!. The bird roasts in half the time and is always nice and moist!.
Good luck!Www@FoodAQ@Com

I always brine my turkey and cook it at 400 for 30 min then drop the temperature to 280 for about 3-4 hours (depending on the turkey size)!.!.!.
A brine, for this purpose, is a liquid to soak the turkey in!. I make mine with 1 cup of salt, 1 cup of sugar, and 2!.5 gallons of water!.(Not a gallon!.!.!.whoops!) I heat the water just enough to melt the salt and sugar--let it cool and then put it into a five gallon bucket ( I use one from home depot that has a lid) then put your turkey in the bucket for at least 24 hours prior to cooking!.!.!.(I usually do a 48 hours soak)!.
The brine impart a bit of flavor but a lot of moisture!!!
You could also put butter under the turkey skin or use an injector on the meat it self !.Www@FoodAQ@Com

I also agree with the brine method!.!.!. but 1 cup of salt per gallon of water!? That sounds crazy!. We usually use about a cup per 5 gallons or so!.

My mom always cooks the turkey for about 5 hours (she always gets really big ones) when it's about an hour from being done she flips the turkey so all the juices are actually penetrating the breast!. She then leaves it like that until done!.Www@FoodAQ@Com
Just stick it in a roasting pan, sprinkle with salt and pepper, dab with butter and roast uncovered at 20 min!. per pound!. Do not overcook because that's what causes drying out!.Www@FoodAQ@Com
