Answers:
"The New Best Recipe" from Cooks Illustrated magazine is utterly awesome (though you may develop a nasty addiction to buying their other books)!. If you like it a little less technical, they also offer "The America's Test Kitchen Family Cookbook", which is just the recipes without all the backstory!.
"Mastering the Art of French Cooking" is possibly one of the greatest cookbooks ever written in the English language -- it made Julia Child a goddess of the kitchen and still remains one of the great books on techniques and general French-style food!. The vegetable chapters in the first volume are especially impressive, and her later solo work "The Way To Cook" is pretty good as well!.
"Cookwise" by Shirley Corriher is one of the best books on kitchen science I've seen -- somewhere between Harold McGee and Alton Brown!.
For a good baking book, try the "King Arthur Flour Baker's Companion"!. Lots of good stuff in there, and one of the least "corporate" brand-name cookbooks I've seen!.
As for general books, a lot of people like Mark Bittman's "How To Cook Everything" series along with Joy, Betty, BH&G, and ATK!. The new vegetarian volume looks to be good for people who want to learn more veg cooking without the rabbit-foodiness of Moosewood or the nutritional woo of Laurel's Kitchen!. Www@FoodAQ@Com

Betty Crocker is probably the best selling NAME!. Lots and lots of cookbooks!. I imagine "Joy of Cooking" is right up there as a good selling title!. I also like "Practical Japanese Cooking" and my Pei Mei Chinese cookbooks!. If you can find it, "Mrs!. Rasmussen's Book of One-Arm Cookery" is both a hoot and a darn good cookbook!. Never forget Peg Bracken, either, and the most practical and fun book, "The I Hate To Cook Book"!.Www@FoodAQ@Com
I don't know what the #`1 selling cookbook of all time is!. But I recently purchased the good old Betty Crocker Cookbook!. It has a ton of recepies, information about different types of food!. It is on a spiral bound which makes it lay flat on the counter while you are cooking and allows you to remove pages with recepies you have no interest in and add more pages as they publish more!. I hope this helps!.Www@FoodAQ@Com
My two favourite cookbooks, (and I have many) are,
The Complete Asian Cookbook by Charmain Solomon!.
It is beautifully illustrated, features about 14 countries, and has every conceivable recipe imaginable!.
#2 is The Edmonds Cookbook, a typical New Zealand book and for most Kiwi's it is considered their bible!. (scones, Pavlova, Anzac biscuits etc)!.Www@FoodAQ@Com

I gotta say, I dont look for name brand books!. The #1 book is different for everyone!. My parents church put out a cookbook and that is my #1!. Lately, I have been bidding on lots of cookbooks on ebay!. I go for the community, school, church, fundraiser cookbooks and they are often sold in boxes!. They contain recipes from all over the US!. It is a good way to get a bunch of recipes and maybe revitalize some old favorites!. So far I have about 700 cookbooks from almost every state!. Hope this idea grabs ya!.Www@FoodAQ@Com
I don't know what the #1 bestseller is but if I had to guess I'd say The Joy of Cooking so you've got that covered!. If you're looking for Indian food: 1000 Indian Recipes by Neelam Batra is amazing and useful!. For Mediterranean cuisine: Arabesque by Claudia Roden (or anything by Claudia Roden!.!.!.she is amazing!)!. On the line of baking, Nigella Lawson's How to be a Domestic Goddess is very good and an entertaining read!. (How does she do it!?) also, I've found that some of the best recipes come from neighborhood, family, or church cookbooks - the kind that someone has printed at Kinko's - lay your hands on some of these too if you can!. Hope this helps!. :)Www@FoodAQ@Com
