i have to eat only veg today as thursday / friday i ate fish, sat / sun i ate meat and Mon / tue i want to eat only veg!.

Vegetarian Lasagne Verdi
Ingredients
2 tbspns!. oil
225g / 8oz leeks, sliced
225g / 8oz celery, chopped
100g / 4oz parsnips, sliced
225g / 8oz can tomatoes
1 tspn!. dried mixed herbs
1 tbspn!. tomato puree
1 tspn!. sugar
1 tspn!. soy sauce
50g / 2oz stuffed green olives, sliced
Salt & black pepper
40g / 1 ? oz margarine
25g / 1oz plain flour
300ml / ? pint milk
150g / 5oz cheddar cheese, grated
175g / 6oz lasagne Verdi, cooked
100g / 4oz cottage cheese
Method
1!. Heat the oil and use to fry the leeks, celery and parsnips until the leeks start to soften
2!. Add the tomatoes and liquid from the can, the herbs, tomato puree, sugar and soy sauce, bring to the boil, stirring, then cook for 30 minutes
3!. Stir in the olives and season the sauce with salt & pepper
4!. Place the margarine, flour and milk in a saucepan and whisk over moderate heat until the sauce boils and thickens
5!. Stir in most of the grated cheese and as soon as the sauce is smooth again, remove from the heat and season to taste
6!. Grease an oblong ovenproof dish and put one-third of the lasagne as a layer in the bottom, cover with half the tomato mixture, then spoon over half the cottage cheese, repeat these layers once, top with the remaining lasagne and pour over the cheese sauce
7!. Sprinkle with the rest of the cheese and bake in a moderately hot oven (200°C / 400°F / Gas mark 6) for 25 minutes, until golden brown on top!.

You can just stir fry or grill some fresh veggies depending upon where you live!. For our dinner today, I grilled a london broil and then "stir fried" on the grill in an open basket a combination of onions, peppers, zucchini and mushrooms!. I moistened the veggies with some of the same honey molasses bbq sauce that we used on the meat!. We all thoroughly enjoyed it!Www@FoodAQ@Com
bake squash, zucchini, and onions!. add some butter spray and soy sauce before baking!. add spices of you choice!.
