Ground Turkey Phyllo Pies

2 tablespoons chopped garlic (use as much or little as you like)
1/2 lb ground turkey
1/2 cup raw spinach
1/2 cup crumbled feta
1/4 cup drained pickled artichoke heart
1/2 teaspoon salt
1/2 teaspoon black pepper
1/3 cup worcestershire sauce
1/4 cup chopped kalamata olive
phyllo dough
1/4 cup of melted butter
1/4 cup extra virgin olive oil
Directions
1Sauté garlic in a couple tsp olive oil on low heat!. Mix ground turkey with Worcestershire sauce, salt, pepper, spinach and 1/4 of the feta cheese!. Mix to incorporate!.
2Add the meat mixture to garlic and cook; add the olives 1 minute before removing meat from heat!.
3Allow to cool!.
4Chop the artichoke hearts; add to cooled mixture along with remaining feta!.
5Cut phyllo pastry in to wide strips depending on desired size (Keep under moistened towel while working)!.
6Combine melted butter and EVOO!.
7Add some paprika for color if desired!.
8Brush phyllo with butter/olive oil and keep layering till 4 or 5 sheets!.
9Spoon in mixture and fold phyllo in triangle flag fold!.
10Place face down on baking sheet!.
11Sprinkle with Some Zattar or Adonis seasoning or some sesame seeds!.
12Bake @375 15-20 minutes!.

PHYLLO TRIANGLES

1 pound phyllo doiugh
1/2 pound butter, melted
10 ounces frozen chopped spinach
1/3 cup finely chopped yellow onion
3 TBSP olive oil
nutmeg, to taste
salt and freshly ground pepper, to taste
1/2 cup finely chopped fresh dill
1/3 cup ricotta cheese
1/4 cup feta cheese

Defrost the spinach!. Drain it, then squeeze out as much moisture as possible!.
Saute the onion in the olive oil until tender and golden, about 20 minutes!. Add the spinach and cook over low heat, stirring constantly, for 10 to 15 minutes until mixture is try!. Season to taste with nutmeg, salt and pepper and place in bowl!. Cool to room temperature!.
Stir in dill, ricotta and feta, crumbled into small pieces!.

Carefully lay out one sheet of phyllo, brush with melted butter!. Cut in fifths the short way!. Place a teaspoon of the filling about one inch from the top and fold, as if you were folding a flag, not too tight!. After all triangles are folded, place on buttered baking sheet and brush the tops with butter!.
Bake at 350F for about 25 minutes, or until triangles are browned!.!.Www@FoodAQ@Com

CHORIZO TRIANGLES

Ingredients

3 tablespoons olive oil
1-pound 8-ounce sweet chorizo sausage, casing removed, finely chopped
1 cup pepper jack cheese, finely chopped
1/2 cup green onions, finely chopped
1/2 cup fresh parsley leaves, finely chopped
Salt and pepper to taste
2 tablespoons butter
20 sheets Athens Fillo? Dough (9”x14”), thawed


In a medium skillet, heat 1 tablespoon oil over medium heat!. Add chorizo sausage and cook 8 to 10 minutes until browned!. Remove from skillet and drain!. Let cool!.

In a large bowl, combine the chorizo sausage, pepper jack cheese, green onions, parsley, salt and pepper to taste!. Set aside!.

In a small saucepan, melt the butter with 2 tablespoons oil!. Layer 4 fillo sheets, brushing each with the butter-oil mixture!. Cut the layered fillo widthwise into 8 strips!. About 1” from end of fillo strip, place 1-1/2 teaspoons of filling!. Fold one corner of fillo diagonally across to opposite edge to form a triangle!. Continue to fold back and forth into triangle to end of strip!. Lightly brush outside of triangle with the butter-oil mixture!. Place triangle seam side down, at least 1" apart, on ungreased cookie sheet or baking pan!. Repeat process 4 more times to make 40 triangles!.

Bake in preheated 350oF oven for 15 - 20 minutes until golden brown!. Serve immediately!.

Yield: 40 small triangles

36 sheets Athens? Fillo Dough, (9 x 14) thawed
1/2 cup butter, melted
Cocoa powder for dusting
Powdered sugar for dusting
2 1/2 cups milk
1 teaspoon vanilla extract
1/2 teaspoon salt
5 egg yolks
3/4 cup sugar
1/3 cup flour
1/3 cup semisweet chocolate chips

Prepare 32 Napoleon diamonds according to directions for Napoleons and Garnishes!. Dust with cocoa and powdered sugar before baking!. Bake on greased cookie sheet in preheated 350oF oven for 5 to 7 minutes or until golden brown!.

In medium saucepan, bring 2 cups of milk, vanilla and salt to a boil!.

In medium bowl, whisk egg yolks and sugar together!. Add flour, whisk smooth and stir in remaining 1/2 cup milk!. Whisk yolk mixture into hot milk, bring to a simmer and cook for 3 minutes, stirring constantly!.

Remove from heat and mix in chocolate chips, allowing chocolate to melt completely!. Cover with plastic wrap and cool to room temperature!.

Assemble Napoleons with 4 layers of fillo diamonds and 3 layers of chocolate cream!. For decoration, place paper doily over top fillo diamond, dust with additional cocoa and powdered sugar and remove doily!. Serve with warm Chocolate Sauce (recipe below)!.

Yield: 8 Napoleons



CHOCOLATE SAUCE

Ingredients
1 cup heavy cream
1/3 cup semisweet chocolate chips

In small pan, bring cream to a simmer, remove from heat and stir in chocolate chips, allowing chocolate to melt completely!.

CREAM FILLO CONES

Ingredients
3 1/2 cups sugar
1 cup corn starch
2 quarts milk
12 egg yolks, lightly beaten
1 grated lemon peel
20 sheets Athens? Fillo Dough (9" x 14"), thawed
1/4 cup butter, melted
Whipped cream for garnish
Sliced fruit for garnish
Powdered sugar to dust

In top of double boiler, over hot water, mix sugar and corn starch together!. Stir in milk, egg yolks and lemon peel!. Cook for about 25 minutes or until thickened!. Stir frequently!. Pour into large bowl and cool completely!. With electric mixer, whip cooled custard on high speed for 1 minute!.

Prepare 20 fillo cones according to directions for Cones and Tubes!.

Bake on ungreased cookie sheet in preheated 350°F oven for about 8 to 10 minutes or until golden brown!. Cool!.

Pipe filling into cones and garnish with whipped cream and fruit of your choice!. Dust with powdered sugar!.

Yield: 20 cones

i like making a nice mushroom stuffed phylo dough triangles!. butter up the layers of phyllo, cut in 1 inch strips!. before u do this, cut up very finely the mushrooms and cook with a little olive oil till the moisture is almost gone, then add some white wine u like and allow the moisture to reduce away that leave the flavour!. add a dollop in each strip and fold in triangles till its all rolled up!. bake at 350 degrees ferenheit till golden brown!. enjoy!.Www@FoodAQ@Com
