Question: Do you have a Spanish Rice Recipe!?
I'm helping to plan a Mexican Themed meal for 50-60 people!. I like Zatarains Spanish Rice but I'm not an expert on what Spanish Rice should taste like so I wondered if someone had a "home made" version!?

If you can get it in your area, look for Fiesta brand spanish rice seasoning!. It tastes a lot better than Zatarains and is a lot cheaper (a jar costs about two dollars and has enough to make 15 batches)!. also, you add a can of tomato sauce to it instead of the can of diced tomatoes!.!.!.which could be a big money saver if you're making a large quantity!. Whatever you do, don't skip the step where you brown the rice a little bit!.!.!.that's what gives it that restaurant taste!.Www@FoodAQ@Com

A typecally Spanish rice is always made with saffron which is very expensive!. So use yellow rice, or regular rice with tumeric!.Use a big flat pan ( Paella pan ) Put your rice in there, pour diced tomatoes, fresh green peas, chopped red onions and chicken broth over it!. Bring to boil and let simmer slowly till done!. For that many people I would made a Fish stew, sausage, potatoes, green peppers and mix the rice with that!. Pan sear your Sausage, onions and bell peppers first!. Add broth and boil the potatoes in it!. When almost done ad your fish!. Ad a little tabasco and paprika for spicing!. Serve it in a bowl with the rice and the stew over it!. Www@FoodAQ@Com

KIDNEY BEAN SPANISH RICE

1 can kidney beans
2 tbsp!. of Crisco
1/2 tsp!. of garlic salt
Pinch of oregano and parsley flakes
1 sm!. onion, finely chopped
1 sm!. can of tomato sauce or 3 tbsp!. tomato paste
1 pkg!. of Sazon goya (seasoning)
7 to 8 Spanish olives
1 c!. rice

In a pot, melt Crisco!. Combine all seasonings, onions and tomato sauce!. Add kidney beans and olives!. Wash rice and put in pot!. Add 2 cups or more of water and bring to a boil!. Reduce heat and let cook for a 1/2 hour!. 6 servings!.
