Question: I need a recipe for Lyonnaise Potatoes
When I was a young woman I worked for a hospital that made the best potatoes I ever had!. This was nearly 20 yrs ago!. Since then I have never known anyone who has made them!. Does any of my friends here know how to make 'em!? Thanks!. They were called Lyonnaise potatoes!. They were served with roast beef!.Www@FoodAQ@Com

Any dish bearing the name "Lyonnaise" has onions in it!. Lyon in France is famous for it's onions!. Lyonnaise Potatoes are boiled potatoes sliced and fried, mixed with sliced fried onions!. They can be prepared deep-fried for speed, but purists might say they should be shallow-fried in clarified butter!. A little fresh chopped parsley looks good sprinkled on them!. If you make them with the addition of sliced mixed peppers they are then called Columbine Potatoes, which I think taste even better!Www@FoodAQ@Com

I have a great recipe for Lyonnaise Potatoes on my blog - from a 1920s recipe that I collected years ago!.

This is actually a very good recipe for potatoes! It's easy to make and adds a side dish to your meals that is a welcome difference from the usual - 1923 recipe!.

One quart cold boiled potatoes ~ boil and allow to cool off and cut into 'dice' or small squares
3 Tbsp!. butter
1/4 of a chopped onion
1 Tbsp!. chopped parsley
Salt & Pepper

Saute the onions in the butter until they brown ~ then remove onions
Add the potatoes to the butter
Stir potatoes with a fork, being careful not to break them
When potatoes are hot, add the parsley and put the onions back in with potatoes and cook two minutes longer (parsley can be omitted)
