How much "peel" is O.K. to shave off squash to save nutrition?!
I have received many garden-fresh squashes from my neighbor's garden!.
I plan to cook these to save all the nutrition I can!. How much (thickness) of the thick peel (if any) could I shave off these squash plants to save all the nutrition!?Www@FoodAQ@Com

don't peel your squash, summer squash (its the season) like zucchini crook neck and pani pans are all soft skinned squash!. If you are talking about winter squash just cut it in half, remove the seeds and bake it with a little water in the bottom of the baking dish!. Eat the squash out of the skin!., Winter squash are, acorn, banana, spaghetti, butternut, etc!. and all have thick tough skins!. The winter varieties are all types of gourds like pumpkin by the way!.Www@FoodAQ@Com
Most of the time I don't peel or seed my squash!. I am having to change my cooking from frying to steam cooking or baking!. Squash is good baked!. Spray the pan lightly, arrange sliced squash, salt and bake!. You have to watch it closley!. Take it up when you think it is done!. You can always return it to the oven if it isn't!.
Peel or shave off by scraping with a knife!. You won't peel too deeply or get too much off that way!. and will save all the nutrition!. Potatoes & cucumbers can be peeled the same way!.!. Happy eatingWww@FoodAQ@Com
Most of the nutrients are just under the peel!. I would slice the squash in half, and seed it!. Bake it with some honey and a little butter!. Scoop out the pulp and go as close to the peel as possible!.Www@FoodAQ@Com
I doubt that there is any nutritional value in the peel, unlike potatoes!.
It's mostly indigestible fibre; which you can leave on while cooking!.

You can cut them up, cook them first (bake or microwave), then scoop the flesh out!. This way you can scoop out any eatable part and leave just the skin!.!.!.Www@FoodAQ@Com
I only peel about half my squash, for nutrients & color - (husband HATEs it) I peel down the side, then I turn the squash & peel some more leaving some skin/peel on!.!.!.!.Www@FoodAQ@Com
i don't know of anyone that peels their squash!. I wash mine real good and slice the whole squash and cook!.Www@FoodAQ@Com
