I don't have a recipe - I just throw stuff in by eye, but I like a good black bean chili:

black beans
olive oil
chicken or veggie stock
onion
celery
garlic
canned tomatoes
chili powder
Cayenne
salt and pepper
hot green peppers (whatever looks good in the store or a can of diced chilies), roasted and peeled
bell pepper
Leftover pot roast or a ground meat
flour
sour cream and cheese to top off

Saute onions, celery, garlic in olive oil!. Add bell peppers!. Put goodies in crock pot retaining oil in the fry pan!. Brown meat if starting from raw!. Toss everything else in the crock pot and simmer until all ingredients are hot and done!. (Canned beans take 1-2 hours, dry beans all day)!.

Take a little liquid off, mix with a little flour, then pour back into crock pot, simmer another 15 minutes or so to thicken!.

Of course we all know REAL chili did not have beans!.!.!.
Here is the recipe we came up with!.!.!.!.
TEXAS CHILI
2 tablespoons vegetable oil
2 1/2 pounds venison, cut into cubes (or may use 6 lbs!. extra lean competition style chili meat)
1 large onion, chopped
2 large jalapenos, chopped
1 clove garlic, minced
1 (4 ounce) can diced green chile peppers
1 (10!.5 ounce) can beef broth
4 cubes beef bouillon
1 1/2 cans of beer
1 can rotel tomatoes
2 teaspoons dried oregano
2 teaspoons garlic powder
3 1/2 tablespoons chili powder
3 teaspoons ground cumin
1/2 teaspoon salt
1 1/2 teaspoons paprika
1 teaspoon cayene pepper
Flavor enhancer, sprinkled
DIRECTIONS
In a large skillet over medium heat, heat oil, cook venison, onion and garlic in oil until meat is browned!. Transfer to a large pot and stir together with all remaing ingredients!. Bring to a boil the reduce heat to medium-low and cook for 6 to 8 hrs!.
Always taste better the next day after refrigeration!.

TEXAS CHILI

2 lb very lean ground beef or diced chuck steak
7 T chili powder
1 T ground cumin
2 t paprika
1 onion, finely chopped
2 t salt
1 1/2 t cayenne pepper
2 T masa
1 8oz!. can tomato sauce
1 15oz!. can red beans (optional)
1 15oz!. can tomatoes(whole or diced, drained) optional

Brown ground beef and drain!. Stir in tomato sauce and 2 cans of water!. Mix all ingredients except cayenne pepper and masa!. Simmer 30 min!. Add as much pepper as desired!. Mix masa and 1/4 c warm water!. Add to chili and stir well!. Add Tomatoes or beans if desired!. Simmer 20 min!.
