My grandson is very picky too!. I have tempura veggies and he'll eat any type I do that way!. I have also done sliced zucchini lengthwise, drizzle with EVOO and sprinkle with Parmesan cheese, salt & pepper to taste then I broil until cheese is GBD (golden brown and delicious)!. My grandson loves this one!.

I also make lasgna with veggies!. I put zucchini, bell peppers, onions and mushrooms in the layers with the ground beef, cheese and sauce!. My grandson never knows he's eating something healthy!.Www@FoodAQ@Com

I think raw carrots/baby carrots are quite decent!.

Putting vegetables in soup or doused in sauce like marinara or hot sauce really takes away the stigma of eating your vegetables!. In fact, I used to be an EXTREMELY picky eater, and the first time I would willingly stomach vegetables was to eat yummy fried rice!.

If you want to go an alternate route, you can trick people into eating zucchini and pumpkin by baking muffins and breads -- and if you want to try sweet potatoes, there are tons of pies and dessert "casseroles" that incorporate the nutrition!.Www@FoodAQ@Com

My kids & grandkids like corn nuggets!. If you don't know what they are, they are breaded balls of corn!. They have a great taste, plus they are easy to eat!. Perfect for kids!. Sweet potatoes are a good one, too!. My mom used to bake them, then put butter, brown sugar, & sometimes marshmallows on them!. Or you can get the canned ones, put the brown sugar, & marshmallows, & butter on top & brown them in the oven!. I am from the south, so, I also fix fried okra!. I raised MY children eating them,I then got my niece & nephew eating them!. They really pigged out!.Www@FoodAQ@Com

If they wont eat Carrots, put them in Mashed Potatos!.They taste real good and kids love Mashed Potatos!.
Grate your carrots!. I do it on a Box style Cheese Grater, they blend better!.Grate 1 carrot for each person, and boil with the potatos!.Whip them together with the potatos, and serve with butter!.

Fried Okra Vinny's Way!.
Buy whole Pod Frozen Okra ( Not Fresh )
let defrost about 1/2 way and rinse fast under cold water!.
Heat oil as you would for French Fries
Dip Okra in beaten egg, and roll in Italian Bread Crumbs!.
Fry until golden Brown!. ( Roll around in the oil )
Drain on paper towels!.
I guarantee kids and everyone else will love this!.
