Of course it'll be ok!.!.!.cooking is whatever turns you on! Use eggplant, pumpkin, spaghetti, acorn, turban or any other kind of squash that appeals!. Personally, I wouldn't care for any of them in spaghetti myself!. But our tastes are defined by our upbringing and the foods we were exposed to or are willing to try!.
I'm omnivorous, but if I were making a meatless spaghetti, I'd use whole button mushrooms to fill the meat slot!.!.!.!.with sautee'd onions, minced garlic, tomato sauce and diced tomatoes!.!.!.and, now and then, sautee'd green bell peppers!.!.!.sprinkle with oregano and sage and a few table spoons of soy sauce and worcestershire sauce!.
Here again, I'm different than a lot of restaurants!.!.!.!.once the noodles are cooked, back in the pot they go and in goes all the sauce I've cooked up!.!.!.everything mixed and served that way with buttered garlic bread on the side!. None of this noodles on the plate and then the sauce on top!.!.!.!.LOL
But then, I sprang from the Intermountain West!.!.!.that's just the way we did it there!.
Point being, you can substitute just about anything for anything in cooking as long as you're open minded about the results!.Www@FoodAQ@Com

Yes!. I use garden burger sausage soy patties (no meat in them) and crumble them into the spaghetti sauce!. I also use them when dh wants biscuits and gravy low-cholesterol/low-fat!.
You can even just make a meatless spaghetti sauce just with onions, mushrooms, tomato sauce, tomato paste, canned tomatoes - cut up, bell peppers and seasonings!.
It is great over an omelet or quiche using Egg Replacer!.Www@FoodAQ@Com
