In most recipes, taste is the most important difference; I've made brownies, normal brownies, but using peanut oil instead of canola oil left them tasting like chocolate-peanut-butter brownies!. If you are sauteeing or frying in oil, different oils begin to smoke at different temperatures--tea oil is the oil with the highest smoking point that I know of!. Some oils like olive oil and sesame oil have a strong taste; canola, sunflower, and vegetable oils do not have a strong flavor, and can easily be substituted for one another!. If your recipe seems to feature the olive oil--it's one of very few ingredients, or is not accompanied by herbs or spices--it will probably make a significant flavor difference to substitute vegetable oil--that said, the result should be at least edible!. =)Www@FoodAQ@Com

In addition to what Mantee offered, the extra virgin olive oil normally is cold pressed where the temperature caused by the squeezing is kept low so as to not 'cook' the oil!. Canola is heat pressed and you can even get a second or third pressing blended into the original!. The processing is not a tightly controlled as with the olive oil!.Www@FoodAQ@Com

well canola and olive oil have the same amount of omega 3 fatty acids in them!.!. they are both good!. but olive oil has the flavor distinctive to making wonderful salad dressings!.!. canola is just flat tasting!.!. it does better in the cooking!.!. and sauteing!.!. it doesnt smoke as quickly!.!. olive oil isnt good for frying at high temperatures!.!. so thats the difference I noticed!.!. I use both by the way!.!. olive for my salads, and canola for my baking/sauteing!. Www@FoodAQ@Com
