I was wondering if anyone might have a recipe for a meatloaf that can be cooked in a slow cooker!?

That way I will not have to heat up my kitchen in this 100 degree weather!.Www@FoodAQ@Com

Slow Cooker Meat Loaf

You will need: 5 or 6 quart slow cooker
2 lbs!. ground beef
1 1/4 c!. ketchup, divided
1 envelope of onion soup mix
1/2 dry bread crumbs
2 tbsp!. brown sugar
2 eggs

Combine in a large bowl!. ground beef, 1/2 cup ketchup, eggs, soup mix and bread crumbs!. Use your hands to mix all the ingredients thoroughly!. Shape the mixture into a loaf that will fit the shape to your slow cooker!. Place the loaf into the bottom of a 5 or 6 quart slow cooker!. Cover and allow the meat loaf to cook on high for 1 hour and then finish cooking on low for 2 hours to 4 more hours!. Or, cook on low for 4 to 6 hours!. When properly done, the meat should have an internally temperature of at least 145 degrees F!. One half hour before serving spread the 3/4 of remaining ketchup on the top of the loaf!. Sprinkle ketchup evenly with the brown sugar!. Cover again and allow the meat to cook for an additional 30 minutes on low!. When done, use two spatulas, inserting one at opposite sides on the loaf and lift from the slow cooker!. Slice the meat loaf and serve while still warm!.

Classic Meat Loaf

Ingredients
2 pounds ground chuck
1 egg
1/2 cup chopped green pepper
1 packet (7/8-ounce) brown gravy mix
1/2 cup chopped onion
1 cup milk
1/2 teaspoon salt
4 small potatoes, cubed
1 cup cracker crumbs

Directions
Mix all ingredients, except potatoes, in large bowl!. Shape into a loaf!.
Place in stoneware!. Place potatoes at the sides of loaf!. (If potatoes are peeled, wrap in foil to keep from darkening)!.
Cover and cook on LOW 8 to 10 hours!. (HIGH: 4 to 5 hours)!.

I know this isn't really what you asked but a decent size toaster oven in an excellent investment!. I have had one for years and it is great in the summer for baking or even heating up things, altho the microwave does that!. I use mine almost exclusively for cooking and hardly even use the oven in my regular stove any more!.Www@FoodAQ@Com

Melt-In-Your-Mouth Meat Loaf --


INGREDIENTS
2 eggs
3/4 cup milk
2/3 cup seasoned bread crumbs
2 teaspoons dried minced onion
1 teaspoon salt
1/2 teaspoon rubbed sage
1 1/2 pounds ground beef
1/4 cup ketchup
2 tablespoons brown sugar
1 teaspoon ground mustard
1/2 teaspoon Worcestershire sauce



DIRECTIONS
In a large bowl, combine the first six ingredients!. Crumble beef over mixture and mix well (mixture will be moist!.) Shape into a round loaf; place in a 5-qt!. slow cooker!. Cover and cook on low for 5-6 hours or until a meat thermometer reads 160 degrees F!.
In a small bowl, whisk the ketchup, brown sugar, mustard and Worcestershire sauce!. Spoon over the meat loaf!. Cook 15 minutes longer or until heated through!. Let stand for 10-15 minutes before cutting!.

Onion Meat Loaf --


INGREDIENTS
2 eggs
1/2 cup ketchup
3/4 cup quick-cooking oats
1 envelope onion soup mix
2 pounds ground beef



DIRECTIONS
In a large bowl, combine the eggs, ketchup, oats and soup mix!. Crumble beef over mixture; mix well!. Shape into a round loaf!.
Cut three 20-in!. x 3-in!. strips of heavy-duty aluminum foil!. Crisscross the strips so they resemble the spokes of a wheel!. Place meat loaf in the center of the strips; pull the strips up and bend the edges to form handles!. Grasp the foil handles to transfer loaf to a 3-qt!. slow cooker!. (Leave the foil in while meat loaf cooks!.)
Cover and cook on low for 5-6 hours or until a meat thermometer reaches 160 degrees F!. Using foil strips, left meat loaf out of slow cooker!. Www@FoodAQ@Com
