Ingredients:
1 box Ziti or Rigatoni noodles
1 Can spaghetti Sauce (or your own recipe)
1 Ricotta Cheese (16 oz)
2 tablespoons seasoned salt (or more for your taste)
1 cup Mozzarella Cheese
Parmesan cheese
Preparation:
Cook ziti according to directions!. Put in 9" X 13" pan!. Mix in Ricotta cheese and seasoned salt!. Mix in Mozzarella cheese!. Pour sauce over top!.
Bake in 350° oven for 45 minutes!. Sprinkle with Parmesan cheese, serve!.

1 lb fresh mozzarella cheese
3/4 cup freshly grated parmesan cheese
salt
pepper
crushed red pepper flakes
2 tablespoons extra virgin olive oil
1/2 lb sweet Italian sausage
1/2 lb hot Italian sausage
1/2 medium onion, diced
4 garlic cloves, minced
28 ounces whole peeled san marzano tomatoes
6 ounces marzano tomato paste
2 sprigs fresh thyme
1 sprig fresh basil
Directions
1SAUCE!.
2Remove the sausage casings and crumble the sausage!.
3Add 2 teaspoons of olive oil to a pan, and brown the sausage!.
4Puree the tomatoes in a blender (not too much)!.
5Add onions and garlic to now-browned sausage!. Cook for a few more minutes until transparent!.
6Add your tomato puree to the sausage!.
7Add thyme and basil to sauce!.
8Add some salt and pepper to taste!.
9Add a generous pinch of the pepper flakes!.
10Stir this up, heat to near-boil, then let it simmer covered on low for 15 minutes!.
11BUILDING THE DISH!.
12Boil your ziti pasta to not quite al-dente!. Don't overboil, pasta will soften while baking!.
13Cut the mozarella, half of it into 1/2 inch cubes, the other half in as thin of slices as you can manage!.
14Remove the herb sprigs from the sauce and discard!.
15Add the can of tomato paste to your sauce to thicken it up and give it a lively red color and more intense flavor!.
16Add the pasta, your sauce, the cubed mozarella and half the parmesan in a baking dish!.
17Top with the sliced mozarella and the remainder of the parmesan!.

i dont know how to make ziti with ricotta!.
BUT how i make it is a box of whole wheat rigatoni (because its healthy for you) and a can of my favorite marinara sauce (i use tomato basil) cook the pasta seperatly, heat the marinara seperatly!. sometimes i add bell peppers to the marinara as well!. but i cook the pasta til al dente, mix the sauce and noodles in a baking pan, pour mozzerella all over the top, and also cook italian sausages on the side!. i heat in the over until sausages are done and the cheese is all melty and perfect!.

Chop an onion and saute in frying pan in a little oil so it wont stick until it is translucent or tender!. Add ground beef and cook until brown!. Add either a jar of marinara or tomato sauce ( which you will need to add seasoning to like basil, oregano, salt and pepper thats why I use the already seasoned marinara) and some tomato paste which adds richness!. Add water in equal amounts to the paste!. Then seaparately boil water for the ziti or penne pasta!. Boil the pasta until almost done!. Then drain it in a collander and add to the tomato!.meat!. onion mixture (oops forgot to say add chopped garlic to the onions after they have cooked a while!. So now you need to add cheese!. Mix the ricotta with a raw egg until smooth, add to the main mix as well as some other grated cheese-can be monterey jack, chedder or velveeta which melts nicely!. You may add black olives if you like!. The mix should be a little soupy since when you bake it in the oven it will dry out!. Bake until bubbly-about 30 or 40 mins!. 1 container (8 oz i think) whole milk ricotta
1 cup parmesan cheese
cook your pasta according to directions on package!. in a large mixing bowl, mix your pasta with the tomato sauce and ricotta cheese!. pour this mixture into a buttered casserole dish!. sprinkle the parmesan on top and cook covered for 30 minutes!. take the cover off and let cook until cheese browns probably about 10 minutes!.

Mix in Ragu sauce (or whatever kind you like)!.
Add cooked/crumbled sausage or hamburger if desired!.
Stir in your cheese!. (whatever type you like)
Pour into glass dish and sprinkle with more cheese!.
Microwave to melt cheese and to warm!.
**It only needs to be warmed since everything is already cooked!.
