My Standard Recipe:
Cooked, peeled cubed white potatoes
Mayonnaise
Chopped up hard boiled eggs
Celery seed, salt, pepper, then grate an onion to get in only the juice
Adjust all the seasonings to taste and put enough mayo in so it's not too dry!.
Variation on that: my daughter likes when I add a couple teaspoons of plain yellow mustard!. That's good too!.
My favorite is this:
Use red skinned small potatoes - cook them, don't peel them
Mayonnaise
Frozen peas
8-10 slices of cooked bacon crumbled up into it
1/2 cup or more of blue cheese crumbles
salt and pepper to taste
(don't use eggs in this one)

Old-Fashioned Potato Salad
1 cup real mayonnaise
1 cup minced onion
3 tbsps!. white vinegar
2 tsps!. salt
1/4 tsp!. pepper
2 hard-cooked eggs, chopped
3 pounds potatoes, cooked, peeled, cubed (about 6
cups)
2 cups sliced celery
In large bowl stir together mayonnaise, onion
vinegar, salt, pepper and eggs!. Add potatoes and
celery; toss to coat well!. Cover;refrigerate
for at least 4 hours!. If desired, sprinkle with
paprika!. Makes about 8 cups!.
RANCH POTATO SALAD
1 (5 oz!.) pkg!. Kraft scalloped potatoes & cheese
1/2 c!. milk
1/2 c!. Rancher's choice creamy dressing
1/2 c!. Velveeta shredded pasteurized process cheese food
1/2 c!. chopped green pepper
1/4 c!. chopped onion
Oscar Meyer bacon slices, crisply
cooked, crumbled (opt!.)
Bring 2 1/4 cups cold water to boil in 2 quart saucepan!. Add potatoes;
simmer, uncovered, over medium heat 15 to 18 minutes or until most of the
water is absorbed!. Stir in sauce mix and milk; simmer 4 to 5 minutes or
until sauce thickens, stirring frequently!. Cool!. Stir in dressing, process
cheese food, peppers and onions!. Chill!. Top with bacon, if desired!. 8
servings!. Prep time: 25 minutes plus chilling!.
Cajun (Spicy) Potato Salad
4 medium potatoes white or red
-- cooked -- peeled chopped
2 teaspoons ground red cayenne pepper
2 teaspoons prepared mustard
3 eggs -- finely chopped
1/4 teaspoon white pepper
1/4 cup onions finely chopped
1/4 cup bell peppers finely chopped
***GREEN ONION SALAD DRESSING***
1 large egg plus 1 egg yolk
1 cup plus 2 tablespoons vegetable oil
1/2 cup green onions finely chopped
1 1/2 tablespoons Creole mustard or brown mustard
1 tablespoon white vinegar
3/8 teaspoon Cajun spice*
In a large bowl combine all the salad ingredients, mixing well!.
Refrigerate until ready to serve!.

1 ts Yellow mustard
1 1/4 ts Celery seed
1/3 c Diced cucumber
Salt & pepper to taste
While potatoes are warm, pour on the dressing!. Chill 2 hours!. Add
celery and onion!. Add the egg whites, chopped!. Sieve egg yolks,
combine with mayonnaise, sour cream, horseradish, mustard, and celery
seed!. Chill 2 hours and add diced cucumber!.

Our family favorite, easy and yummy: BEST MADE DAY BEFORE
2 - 3 lbs either small red or small yellow potatoes (waxy type)
16 ounces whole sour cream
1 chopped med!. red onion
1 can whole black (Mission type) olives, halved
Chopped fresh dill (or dry) to taste - Optional
Lots of salt and pepper!.
Cook unpeeled potatos whole, if small, halved if large in salted water until fork tender, but not mushy!. Let cool completely!. Leave skins on as they provide texture and fiber, unless you prefer them off!.
Cut into cubes, put into bowl and add remaining ingredients mixing well!. Cover well, refrigerate and the next day taste to see if you need more salt and pepper!. I always make extra to eat for a few days after!. This is a Danish inspired recipeWww@FoodAQ@Com

that's an easy one! Boil potatoes, covered, until fork tender; about 40 mins!.( depending on size)!. Drain and let cool!. Boil an egg or two!. Let cool!. Chop some celery, onion, and dill pickles!. Peel your potatoes and cut into bite size pieces, place in large bowl!. Peel the egg(s), i just squish them in my hand to break them up, and throw those in the bowl!. Add the chopped celery, onion, and pickles!. I add a little of the pickle juice at this point, just a splash!. Season with salt and pepper!. Add a couple of T!. of mayo, and about a t!. of mustard; if you need to make it more moist, add a little more of each!. Sprinkle with paprika (optional)!. My husband is from Czech Republic and when I made the "Normal" potato salad he kind of just looked at me funny!. Over there, they put in chopped eggs, relish,green peas, and shredded carrots!.
