Take a ton of veggies and roast them to get most of the moisture out!. Then mix them with twice as much turkey or meat, add spices to taste, maybe some bbq sauce or worchester sauce, and cook according to any meatloaf recipe!. He'll never know there are veggies in there!. It doesn't even matter what veggies you use!. I've done this with squashes, spinach, broccoli, cauliflower, whatever!. Just be sure that the veggies are minced!. Sauteed mushrooms and onions add a lot to the flavor!.

You can also make a sort of quiche with lots of veggies but lots of cheese, throw in a few eggs, some sour cream or cottage cheese or both!. You can bake it in a pie shell or just a pie plate!. He'll love it!.Www@FoodAQ@Com

Frittata:- Vegetable!.
250g Frozen Mixed Vegetables!. (thawed)
6 Eggs!. (whisked)
1 Onion!. (sliced)
1-2 Cloves Garlic!. (crushed)
Soften onions and garlic in a little oil and add the vegetables!. Season to taste and spread out evenly!.
Pour in the whisked eggs and let them work their way through the vegetables!.
Cook gently until the bottoms of the eggs are set!.
Transfer to a preheated oven and grill (broil) until the top is set!.
Serve onto a plate and cut like a pizza!.
(you will need to use a frying pan with a heat proof handle, or protect it with a bit of foil)

You could add some cold cooked meat, and cut back on the veggies!.

Casseroles, Stews or a Shepherd's Pie are all good to hide veggies from kids, try it on an adult!. LMAO Www@FoodAQ@Com

Just cook what you want, and let him pick the veggies out of his!. I used to try to come up with all kinds of things so my husband would eat veggies!.!.!.I even ground them up and put them in the food processor!. It didn't work!. He will eat lettuce and tomato!.!.!.that's it!. I cook what I want, and what I want to feed to my kids, and I just let him pick the veggies out and put them on the side of his plate!.!.!.it's not worth the trouble!.Www@FoodAQ@Com

what's with men and veggies!? my husband is the same way!. unless it's corn out of a can, he doesn't like it!.!.!.!.and forget getting him to try something new! sheesh!

well, to answer your question, you can make him something simple that he likes, which is probably just about anything you would give to a 10 year old!.!.!.!.p!.b!. & j, or grilled cheese!. make him something that takes practically no effort from you, and spend your cooking energy on making yourself a nice stir-fry or steamed veggie plate!. there's no point in trying to make him eat his veggies!. if his parents coudln't get him to do it, what makes you think you can!? :) good luck!Www@FoodAQ@Com

My son is very picky and hate vegetables when they are by themselves, but he loves it when I make homemade chicken pot pie!.I'm sorry I don't have the recipe with me right now (I'm on vacation) but it's in the Bisquick cookbook,or maybe Bisquick has a website,I don't know but it's worth a try!.Www@FoodAQ@Com

I have the SAME problem!.
My boyfriends extremely picky!

I don't cater to what he wants anymore!.
It only causes you to be unhappy with how your eating!. Ya know!?
Tell him to take it or leave it!.
I like to cook too! And I know its hard!.Www@FoodAQ@Com

Stews, soups, pot roast, baked chicken, salads, casseroles!. Mac and cheese with some added mixed veggies(I use frozen and cook before hand then add to macaroni as I add the cheese)Www@FoodAQ@Com

make a fondue!. this is a simple tray that you could have both fruit and veggies on!. (belive it or not but alot of fruit tastes really good with ranch dressing)Www@FoodAQ@Com
