Question: Anyone have a hearty one-pan breakfast recipe they can share!?
I'm trying to find good things to cook on our boat that don't require a lot of cookware or storage space!. Any tips!?Www@FoodAQ@Com

-a frying pan
-eggs (amount suitable for your family)
-ground sausage (kind you can fry in the pan like hamburger)
-onions
---anything else you like to taste---

place sausage and onion in a pan!. fry sausage until fully cooked (or browned)

while sausage is browning, crack eggs and place into a bowl (as you would in getting them ready to scramble!.

empty eggs into pan and cook until eggs are scrambled!.

very easy!. very tasty!. and very hearty!. (full of protein!.)

Black Bean Huevos Rancheros --


INGREDIENTS
1 1/2 cups fresh tomatoes, seeded and finely chopped
1/4 cup sliced green onions
1/4 cup chopped fresh cilantro
2 tablespoons fresh lime juice
1 fresh jalapeno pepper, seeded and finely chopped
1 clove garlic, minced
salt, to taste

2 teaspoons canola oil
2 cloves garlic, minced
1 (19 ounce) can black beans, drained and rinsed
1/2 cup chicken broth
1 teaspoon chopped chipotle chiles in adobo sauce
8 (7 inch) corn tortillas
1/2 cup shredded Monterey Jack cheese
4 eggs



DIRECTIONS
To make the salsa, stir the tomatoes, green onions, cilantro, lime juice, jalapeno pepper, 1 clove minced garlic, and salt to taste, together in a bowl until well blended!. Cover, and refrigerate until needed!.
Preheat oven to 375 degrees F (190 degrees C)!. Lightly grease a baking sheet!.
Place 1 teaspoon canola oil in a skillet, and heat over medium heat!. Stir in the garlic, and cook 1 minute until light brown!. Mix in the black beans, chicken broth, and chiles; simmer until beans are heated through, about 5 minutes!. Turn off heat, and keep warm!.
Place four tortillas on the prepared baking sheet!. Sprinkle the cheese evenly over the tortillas!. Top with the remaining four tortillas!. Cover the baking sheet with aluminum foil!.
Bake tortillas in preheated oven until cheese melts, about 5 minutes!.
Place the remaining 1 teaspoon canola oil in a skillet, and heat over medium heat!. Crack eggs into skillet, and cook to desired firmness!.
To assemble huevos rancheros, place filled tortillas on four serving plates!. Top each tortilla with black bean mixture, a layer of salsa, and an egg!. Serve immediately!.

Quiche Lorraine --


INGREDIENTS
1 recipe pastry for a 9 inch single crust pie
12 slices bacon
1 cup shredded Swiss cheese
1/3 cup minced onion
4 eggs, beaten
2 cups light cream
3/4 teaspoon salt
1/4 teaspoon white sugar
1/8 teaspoon cayenne pepper



DIRECTIONS
Preheat oven to 425 degrees F (220 degrees C)!.
Place bacon in a large skillet, and fry over medium-high heat until crisp!. Drain on paper towels, then chop coarsely!. Sprinkle bacon, cheese and onion into pastry shell!.
In a medium bowl, whisk together eggs, cream, salt, sugar and cayenne pepper!. Pour mixture into pastry shell!.
Bake 15 minutes in the preheated oven!. Reduce heat to 300 degrees F (150 degrees C), and bake an additional 30 minutes, or until a knife inserted 1 inch from edge comes out clean!. Allow quiche to sit 10 minutes before cutting into wedges!.

Sausage Gravy --


INGREDIENTS
1 pound ground pork sausage
2 tablespoons margarine
1/4 cup all-purpose flour
4 cups milk
salt and pepper to taste



DIRECTIONS
In a large skillet over medium high heat, saute the sausage for 10 minutes, or until browned!. Stir in the margarine until well blended, then stir in the flour until mixture is thick and pasty!.
Reduce heat to medium low and slowly add the milk, stirring constantly, until mixture is thick and bubbly and to desired consistency!. Season with salt and pepper to taste!.

When we would go camping, my dad always made this mixture of scrambled eggs, sausage, mushrooms, cheese, and peppers!. He just dumped all the ingredients into the pan and cooked away!. It tasted amazing!.

Another option are those Kashi frozen waffles!. They're pretty good topped with a reduce sugar jelly!. Simple, but maybe not as hearty as you're looking for!?


Sorry I'm not full of more idea!. I would consider freezing diced produce and ingredients to have on hand for making omelettes (mushrooms, onions, peppers, pre-cooked bacon, etc)!. Www@FoodAQ@Com

Here you go!. What could be better on a boat then good old Navy SOS, S*H*I*T on a Shingle!. Red or white!. The other one, Chipped Beef on Toast!. Or as we called it "Foreskins on Toast"!.
Even thought we had rough names for these breakfast delicacies everyone I know who served still think they were great meals!. I still make them from time to time!. My mom made them when I was a kid as my dad got them during WWII!. Www@FoodAQ@Com

I used to have the same situation when I went camping!. Hmmm, sausage links and eggs are great!. The sausage oil helps the eggs not to stick and adds a nice flavor to them!. also french toast!. I used to do that and then put cut up fresh fruit over it!.Www@FoodAQ@Com
