These crispy courgette chips are covered in batter and deep fried before being tossed with grated Italian cheese!. You may find the humble courgette going up in your estimation when you try this very quick and easy side dish!. This is perfect served with grilled sea bass!.
Serves 4 as an accompaniment
Ready in 15 minutes
Ingredients
225g courgettes
1? tbsp plain flour
Vegetable oil, for deep frying
2 tbsp finely grated Grana Padano cheese
Method: How to make crispy courgette chips
1!. Slice the courgettes into 3mm thick x 7cm long chips!. Put the flour in a bowl and beat in 50ml water to make a smooth, thick batter the consistency of soured cream!.
2!. Half-fill a deep saucepan with oil!. Place over a high heat until it reaches 180°C (or until a cube of bread turns brown in 1 minute)!. Drop half the courgette chips into the batter and turn to coat!. Using a fish slice, lift the courgette chips out of the batter and allow the excess to drip off!.
3!. Carefully drop the courgette pieces into the hot oil and cook for about 1-2 minutes, until golden!.
4!. Remove from the hot oil with a slotted spoon and drain on kitchen paper!. Toss with the cheese when still hot and add a good grinding of black pepper!. Repeat with the remaining courgettes and serve immediately!.

Courgette Soup
Ingredients
Serves 4
1 kg courgettes - any size and colour
250g potatoes (suitable for mashing), peeled or scrubbed
2 cloves garlic, peeled & crushed
1 medium onion, peeled & chopped
30ml olive oil
150g soft cheese (see note below for alternatives)
Handful fresh chives, chopped
Handful fresh summer herbs of your choice, chopped
1 1/2 pints water (or mild-flavoured stock)
Method
1!. Wash the courgettes and chop them into chunks!. Cut the potatoes into cubes (smaller than 1 inch)!.
2!. Heat the oil gently in a large pan!. Add the onion and garlic!.
3!. Gently cook for about 5 minutes, to soften!.
4!. Add the potatoes!. Stirr!. Cook gently, covered, for about 15 minutes, until about half-cooked!.
5!. Add the courgettes and stir!. Cook for about 5 minutes until softened, stirring occasionally!.
6!. Add 1 1/2 pints of water - just enough to cover the contents of the pan!. Bring to the boil and simmer gently for 10 minutes, or until the potatoes are soft!.
7!. Remove from the heat and liquidise the soup!.
8!. Add the Cheese & herbs!.
9!. Season to taste with salt & pepper!.
10!. Serve with fresh bread!.

4 green zucchinis
2 big tomatoes
1 onion (or 1/2 c!. frozen chopped onion)
1 c!. uncooked rice
1 garlic clove or some garlic powder (optional)
2 tbsp!. olive oil
Salt, pepper, oregano or thyme
Dice the zucchinis (no need to peel, if you wash them first), hold in a colander and sprinkle with salt!. Set aside 15 minutes over a dish or in the sink to drain!. Chop onion and garlic; peel tomatoes and chop to 16 pieces each!.
Heat olive oil in heavy saucepan at medium to high heat!. Throw onion and tomatoes in, allow to cook 5 minutes, then add the zucchinis!. Be generous with salt and pepper!. Add herb!. Cover, lower heat, let simmer 30 minutes!.
Wash, drain and add the rice, stirring!. Cover and let simmer again 25 minutes more!. If the rice appears a bit dry in the end, add a little boiling water and let simmer 5 more minutes!. Yield: 4-6 servings!.
2!.VEAL WITH COURGETTES
1/4 c!. oil
2 lbs!. stewing veal, cubed
2 onions, chopped
1 clove garlic, crushed
1 green pepper, deseeded & chopped
1 1/4 c!. dry white wine
1 1/4 c!. chicken stock
Bouquet garni
1/2 tsp!. dried mixed herbs
Salt & pepper
1 lb!. courgettes
2 tbsp!. butter
1/4 c!. flour
Chopped parsley & triangles of fried bread to garnish
Heat the oil in a flame proof casserole and gently saute the meat until golden!. Add the onions, garlic and green pepper and continue to saute until the vegetables are softened!. Drain off any excess oil and pour in the wine and stock!. Add the bouquet garni and herbs and season!. Bring to the boil, cover and place in a moderate oven, 350 degrees, for 1 hour!.
Slice the courgettes and add to the casserole!. Mix well and return to the oven for a further 30 minutes!. Remove the bouquet garni!. Blend together the butter and flour and stir into the casserole, a little at a time!. Heat through until thickened!. Garnish!. Serves 4 to 6!.

I usually combine zucchini, yellow squash, and green mexican squash with onions, garlic, a little red wine, basil, oregano, rosemary, sage, and tomato sauce!. YUMMO!

I bought loads the other week!. I used them with pasta!. Grated with salad!. Pureed for a curry base!. Chopped and roasted with aubergines, mushrooms and tomatoes!.!. etc!.Www@FoodAQ@Com
