Question: Do you have a good chicken and dumplings recipe!?

1!.HUNGARIAN CHICKEN PAPRIKAS WITH
DUMPLINGS

1 frying chicken, cut into 8 pieces
1 large onion, chopped
4 tbsp!. butter
1 tbsp!. Hungarian paprika
1 1/2 cups water
1/2 pint dairy sour cream

Dumplings:

3 eggs, beaten
3 c!. all-purpose flour
1 tbsp!. salt
1/2 cup water

In a large heavy or cast-iron skillet, sauté the onions in butter until browned lightly!. Remove pan from heat!. And add paprika and mix well!. Add chicken pieces and return pan to stove!. Add water!. Cover and simmer over low heat until chicken is tender, about 1 1/2 hours!. Stir in the sour cream!. Heat thoroughly without boiling!. Add dumplings!. To make dumplings, combine all the dumplings ingredients!. Beat with spoon until smooth!. Drop by teaspoon full into boiling salted water; cook until done, approximately 10 minutes!. Drain dumplings, rinse with cold water, and add to paprikas!.

2!.SOUTHERN CHICKEN N' DUMPLINGS

2-3 chicken breast (with bone and skin)
water
1 stick of butter
3 cups self-rising flour
1 cup milk
1/2 cup vegetable oil
salt and pepper, to taste

Place chicken and butter in a Dutch oven and cover with water!. Boil on medium-high until chicken is done!. Remove chicken, debone, and pull apart!.

Return chicken to broth and set heat to medium!.

Dumplings: Place flour in a large bowl and make a well in the middle!. Add milk and vegetable oil!. Stir to make a firm dough!. Knead dough a few times until dough is no longer sticky!. Add more flour, if necessary!.

Roll out dough on a floured surface and cut into strips!. Drop dough into broth!. Stir frequently!. More water may be added to make a larger quantity without diluting flavor!. Add salt and pepper to taste!.

Cook 10-15 minutes on low!.

3!.CHICKEN & DUMPLING SOUP

20 lb!. chicken, cooked & cut up
2 lb!. carrots, cut up
2 c!. chopped celery (more if you like)
1 lg!. onion, chopped fine

Use some chicken base for flavoring, if needed!.

DUMPLINGS:

20 eggs
5 c!. water, approx!. (a little more if needed)
5 lb!. flour
1 tbsp!. salt

Cover and simmer 10 minutes if dumplings are teaspoon size!.

I use Pillsbury's Biscuit dough (because I'm lazy), drop it on top of my chicken and veggies (in a glass baking-dish), sprinkle a mix of swiss and cheddar cheeses over it and then bake at 350 for 20 minutes!.

Mom called it "Cheap-Cheep"!.!.!. was convenient for feeding 4 boys!.Www@FoodAQ@Com

I don't have it written down anymore (now it's just "a pinch of this a pinch of that"), but I went on line years ago and got an awesome recipe for c & d from the Colonial Williamsburg, Virginia, site!. Plus, I felt a tad colonial making it!. It was great!. Made it in the Crock Pot!. Check it out!.Www@FoodAQ@Com

If you are making the light round fluffy ones, versus the noodle type, I have found that adding to my dumpling batter a dash of nutmeg, a little poultry seasoning and a little dried parsley spruced mine up quite nicely!.Www@FoodAQ@Com
