I want to cook a nice 3 course romantic meal for my hubby?!

Good on you for wanting to branch out and try something new! What a lucky husband you have!.
It depends what sort of food he is in to, but Italian food is always fun and rather romantic (ahh those Italians)!. To give you some options I'll suggest the following simple recipes!.!.!. if you are cooking three courses it's good to keep it simple!. :
STARTERS:
Garlic bread - spread small thin pizza bases with garlic butter and baked in the oven!.
OR
Soup - buy a nice gourmet soup from your supermarket!.
OR
Stuffed peppers:

Grilled salmon with pesto

OR
Chocolate brownie with icing sugar and a scoop of vanilla icecream
OR
Some nice cheeses (brie, chedder, etc) with crackers and grapes, and you can sit and drink wine and eat cheese and talk intimately!.!.!.!.!. lovely!!

Men love lamb shanks:

cover with one can of chopped tomatoes
add a clove of garlic
one chopped onion
one teaspoon of beef stock
and bake on 150 degrees celcius (medium heat) for 4 hrs
serve on bed of mash potato
