I got a really good cream cheese icing that goes well with strawberry flavoured cake, it works perfectly on carrot cakes and chocolate cakes, too!.

2 (8 ounce) packages cream cheese, softened
1/2 cup butter, softened
2 cups sifted confectioners' sugar
1 teaspoon vanilla extract

also, I have a recipe for strawberry cake that I have tried recently and my friends love it, see if it can help you :)))))

1 (18!.25 ounce) package white cake mix
1 (3 ounce) package strawberry flavored gelatin
2/3 cup vegetable oil
4 eggs
3 tablespoons all-purpose flour
4 ounces frozen strawberries
1/2 cup buttermilk

1!. Thaw and drain the frozen strawberries!.

2!. Preheat oven to 350 degrees F (175 degrees C)!. Lightly grease on 9x13 inch cake pan!.

3!. Combine the white cake mix, strawberry gelatin, oil, eggs, flour, thawed strawberries, and buttermilk and mix until just combined!. Pour batter into prepared pan!.

4!. Bake at 350 degrees F (175 degrees C) for about 25 to 35 minutes or until a toothpick inserted in the center comes out clean!.

Good luck :)))))Www@FoodAQ@Com

The best strawberry cake is also the easiest!. Make or purchase an angle food cake, Have 2 quarts of fresh ripe strawberries, 1 1/2 pints of heavy whipping cream, 2 - 4 Tablespoons granulated sugar, 1 tsp vanilla!.

Place a clean glass or metal bowl into the freezer with the beaters of your mixer!. also place cream into coldest part of the refigerator or into the freezer (if in the freezer do not let it freeze just get really cold)

Rinse and dry berries, Set aside 12 whole berries for garnish!. Hull and slice or chop berries and set aside!.

With serrated knife slice 1 1/2 inches from top of cake and set aside
Carefully cut out the center of the cake leaving an inch border all around!. Save pieces for another day

Remove bowl and beaters from freezer and place cold cream into bowl and beat at medium speed until soft peaks form, Gradually sprinkle in the sugar to taste!. Beat til firm peaks form fold in the vanilla!. Remove 2 cups of whipped cream and fold in cut berries!.

Fill the cavity of the cake with the whipped cream and strawberries and replace the cake top!. With the plain whipped cream frost the top and sides of the cake and decorate with reserved strawberries!. Keep in the refrigerator until ready to serve!. Use a serrated knife to cut slices!.Www@FoodAQ@Com
