How do you cook eggplant without so much oil?!

Question: How do you cook eggplant without so much oil!?
Answers:
I slice the eggplant, spray a cookie sheet, place the rings of eggplant on the cookie sheet, spray the eggplant and bake it at 500o, turning it once as it starts to brown!. Sometimes I lightly flour the eggplant but not necessary!. Just don't let it burn!. I learned that from a wonderful Italian restaurant that used to exist in South Seattle, Washington named Italo's - it was a great little restaurant with the candle in the wine bottle on the red checkered tablecloth!. I miss that place!!Www@FoodAQ@Com
