Need the PERFECT recipe for the picky eater.!

I am looking for a recipe for buns!.
My husband is what you would call a picky eater!. He doesnt like bread sandwiches, rather he prefers to eat his sandwiches on buns!. Right now he is buying the panini rolls from the bakery at about 30 cents a piece i figure i can make em cheaper, besides i LOVE to bake!.
I tried a panini bun recipe that turned out HORRIBLY!!! They were heavy thicky and dark!. HELP!!!Www@FoodAQ@Com

I don't want to offer a recipe because mine all use a mixer with dough hook, but just find a bread recipe that you like and instead of forming the dough into loaves, form individual rolls after punching it down after the first rise!. Obviously you'll have to lessen the baking time but the temp will be the same!. I don't know if he'd prefer a Kaiser type roll or a softer hamburger style roll!. For the Kaiser, review Italian breads!. For the softer, look up Parker House rolls or potato breads or even regular white breads!. Maybe you can get him to eat whole wheat or rye rolls also!Www@FoodAQ@Com
well this is a brioche recipe that is really yummy!.
8 oz fresh yeast
6 oz milk
8 eggs
5 oz sugar
1 lb 8 oz bread flour
1 lb 3 oz all purpose flour
1 oz salt
1 tsp pepper
12 oz soft butter
Add all the ingredients to mixer except butter, and mix with hook till it comes together, about 2 minutes!. add the butter in small pieces, then mix on medium for about 7 minutes!. cover and let rise till doubled in size!. for rolls weigh at 1!.5 oz and put in well sprayed muffin cups (or for bigger rolls, double the size and just bake on cookie sheet!. let rise, then brush with egg wash (1 egg and a little bit of water mixed with a fork) and sprinkle with kosher salt and cracked pepper!. bake @350 until golden brown (about 12 minutes for smaller rolls)
