Question: I need help making a good Pineapple Cake!
No, I don't want to make a Pineapple upside down cake, I want to make a nice soft yellow cake with pineapple glaze and little bits of the fruit on top!. So!.!.!.How can I make it soft and moist and how do I make the glaze for the cake!? also, should I put pineapple pieces in the cake while baking!? Thanks to all in advance!Www@FoodAQ@Com

I got a great recipe for you, it is a very easy one, start with a yellow cake mix!. It is a very moist one and it becomes even better the next day!.

1/2 cup margarine, softened
3 eggs
1 (18!.25 ounce) package yellow cake mix
1 (20 ounce) can crushed pineapple with juice
1/2 cup chopped pecans
1/2 cup margarine, softened

1 (8 ounce) package cream cheese, softened
4 cups confectioners' sugar
1/2 cup chopped pecans (optional)

1!. Preheat oven to 350 degrees F (175 degrees C)!. Grease and flour 3 - 8 inch round pans!.
2!. In a large bowl cream 1/2 cup margarine until smooth!. Blend in the eggs!. Add the cake mix and crushed pineapple with juice and mix until smooth!. Stir in the 1/2 cup chopped pecans!.
3!. Pour batter into prepared pans!. Bake in the preheated oven for 20 to 30 minutes, or until a toothpick inserted into the centers of the cakes comes out clean!. Allow to cool!.
4!. To make the frosting: In a medium bowl cream 1/2 cup softened margarine and the cream cheese until smooth!. Gradually blend in the confectioners' sugar and 1/2 cup chopped pecans!.

This is realluy delicious and very easy to make;

2 cups all-purpose flour
1 teaspoon baking soda
2 eggs
1 1/2 cups white sugar
1/2 teaspoon salt
1 (20 ounce) can crushed pineapple with juice
3/4 cup butter
1/2 cup white sugar
1/2 cup evaporated milk
1 teaspoon vanilla extract

Preheat oven to 350 degrees F (175 degrees C)!. Lightly grease one 9x13 inch pan!.
Mix the flour, baking soda, salt, and 1 1/2 cups of the white sugar together!. Stir in the beaten eggs and the pineapple with juice and mix well!. Pour batter into prepared pan!.
Bake at 350 degrees F (175 degrees C) for 30 minutes!. Pour Buttery Milk Syrup over top of cake while still warm!.
To Make Buttery Milk Syrup: In a sauce pan combine the butter or margarine, evaporated milk, vanilla, and 1/2 cup white sugar!. Bring mixture to a boil over medium high heat and cook for about 5 minutes!. Pour over cake while still warm!. Serves 24!.

I love this recipe!.!.!.just add a bit of the crushed pineapple to the icing mixture!. Yum!

Pineapple Cake with Cream Cheese Frosting

Ing:
* 1 (8 oz!.) can crushed pineapple, well drained
* 2-3/4 cups flour
* 1-1/2 cups sugar
* 3-1/2 tsp!. baking powder
* 1 tsp!. baking soda
* 1/4 tsp!. salt
* 1/2 cup pineapple-orange juice
* 1/4 cup milk
* 3/4 cup vegetable oil
* 1 tsp!. vanilla
* 4 eggs
* 1/2 cup ground almonds
* 1 (8 oz!. pkg!.) cream cheese, softened
* 1/4 cup butter
* 3-4 cups powdered sugar
* 3-4 Tbsp!. pineapple-orange juice

Dir:
Preheat oven to 325 degrees F!. Spray a 13x9" pan with nonstick baking spray with flour (or grease & flour the old fashioned way) and set aside!.

In large bowl, combine pineapple, flour, sugar, baking powder, baking soda, salt, 1/2 cup pineapple-orange juice, milk, vegetable oil, vanilla, and eggs and almonds; beat until combined, then beat for 2 minutes on medium speed!.

Pour batter into prepared pan!. Bake at 325 degrees F for 30-40 minutes or until toothpick inserted in center comes out clean and cake pulls away from sides of pan!. Cool completely on wire rack!.

In large bowl, combine cream cheese and butter and beat until fluffy!. Add 3 cups powdered sugar and 2 Tbsp!. pineapple-orange juice and beat well!. Add more powdered sugar and juice as needed for desired spreading consistency!. Frost cooled cake!.Www@FoodAQ@Com
