Orange Chicken
Today I’m back with yet another Chinese-American dish – Orange Chicken!. It seems as though you can find orange chicken almost anywhere you want to eat these days!. It is most commonly found at fast food restaurants, but don’t worry, this is so much better than anything you will find there!. What really makes this recipe stand out is the combination of both orange and lemon juice!. Once again we are also using the deep dryer for cooking the battered chicken!. Now I get a lot of questions from people wondering if they can use a wok instead!. The answer is yes; a wok would work just about as good as a deep fryer and can be used without a problem!. Just be sure to add enough oil!. Great oil for frying this battered chicken would be peanut oil!. Using peanut oil will give you the most flavorful chicken!. If you’re looking for a simple Chinese dish for dinner this evening be sure to give this recipe for orange chicken a try!.
Orange ChickenOrange Chicken
Ingredients:
Chicken-
2 lbs boneless skinless chicken breasts (cut into 1-1/2” cubes)
1 ? cups all purpose flour
1 eggs (beaten)
? teaspoon salt
? teaspoon pepper
Oil (for frying)
Orange Sauce-
1 ? cups water
2 tablespoons orange juice
? cup lemon juice
1/3 cup rice vinegar
2 ? tablespoons soy sauce
1 tablespoon orange zest (grated)
1 cup packed brown sugar
? teaspoon ginger root (minced)
? teaspoon garlic (minced)
2 tablespoons green onion (chopped)
? teaspoon red pepper flakes
3 tablespoons cornstarch
2 tablespoons water
Cooking Instructions:

Step 1: Combine flour, salt, and pepper!. Dip chicken in egg mixture and shake in flour mixture to coat!. Deep fry chicken in batches at 375 degrees in a deep fryer (or use a wok) until completely cooked!.

Step 2: Meanwhile, in a large saucepan combine 1 ? cups water, lemon juice, orange juice, rice vinegar, and soy sauce!. Blend well over medium heat for a few minutes!. Stir in brown sugar, orange zest, ginger garlic, and onion!. Bring to a boil!.
Step 3: Combine 3 tablespoons of cornstarch with 1/4 cup of water and mix thoroughly!. Slowly stir cornstarch mixture into sauce until it thickens!. Pour sauce over breaded chicken, and if desired add red pepper flakes and garnish with green onions!. Enjoy!.

CHOW MIEN
1 lb!. pork or chicken cut in thin strips
3 c!. thin celery slices
1 c!. of onion slices
1 c!. of sliced fresh mushrooms
2 1/2 tbsp!. corn starch
1 can condensed beef broth
1/4 c!. soy sauce
1 (1 lb!.) can bean sprouts, drained
1 (5 oz!.) can water chestnuts, drained and sliced
In large skillet, cook meat in 1 tablespoon hot oil until done, about 10 minutes!. Remove from skillet!. Cook celery, onions and mushrooms in 2 tablespoons oil until crisp-tender, 2 to 3 minutes stirring often!.
Blend corn starch and 1/4 cup water!. Add beef broth and soy sauce (and 1 tablespoon brown gravy if you want)!.
Stir into vegetables!. Add meat, bean sprouts and water chestnuts!. Heat and stir until thickened!. Serve over rice!.

CHINESE MEAL

1/4 c!. oil
16 oz!. can pineapple chunks
Jar cherries
1/4 c!. white vinegar
2 tbsp!. Worcestershire sauce
2 tbsp!. soy sauce
1/3 c!. sugar
1 c!. sliced carrots
1 c!. broccoli
Heat oil!. Mix 1/4 cup flour with ginger!. Coat meat in this mixture and brown!. Remove from pan!.
Add water to pineapple juice to make 1 cup!. Shake remaining flour and juice mixture to make a paste!.
Stir paste in with vinegar, Worcestershire sauce and soy sauce in the pan of drippings!. Heat to boiling, stirring until thick!. Lower heat!. Stir in sugar, meat and vegetables!. Cover and cook for 40 minutes!. Add pineapple and cherries and cook for 10 more minutes!.
NOTE: Pea pods, water chestnuts, or peppers can also be added with vegetables!. Serve over rice!.

1 lb!. ground beef
1/2 c!. rice, not minute
2 tsp!. chili powder
1 tsp!. salt
1/4 tsp!. cayenne pepper
1/8 tsp!. black pepper
1 (10 1/2 oz!.) condensed tomato sauce
1 c!. water
1 #303 can red kidney beans
Melt shortening in a large skillet (iron is best)!. Add onions, garlic powder, ground beef and rice; brown slightly!. Add chili powder, salt, cayenne pepper, black pepper, tomato sauce, water and red kidney beans!. Stir until ingredients are blended on high flame until mixture steams, switch to low heat; simmer (covered) for 20 minutes!. A very delicious meal in just 20 minutes!. A salad will go great with this meal!.

SHAO PU K'U (CHINESE SPARE RIBS)
1/4 cup soy sauce
1/2 cup dark brown sugar
2 tablespoons molasses
1/2 cup ketchup
1/4 teaspoon cayenne pepper
1/4 cup Chinese black bean sauce
4 cloves garlic, minced
salt and pepper, to taste
1 4-5 lb baby back ribs strip
Ask your butcher to separate ribs, cutting each in half, or obtain short ribs!.
Put first 8 ingredients into a large bowl and combine well!. Add ribs, turning to coat well!. Cover bowl with plastic wrap and marinate, refrigerated for 1-2 hours!.
Rub grates of grill with oil and bring temperature to 350F!.
Barbecue ribs for about 40 minutes (or until tender), turning over once, and basting once or twice with marinade!. (Do not baste during the last 15 minutes of cooking!.)

PAN CHI)
1/2 spring chicken
2 cucumbers
1 clove garlic
1 slice ginger
1/2 stalk green onion
2 chili peppers
Shred cucumbers!. Mince garlic, green onion and ginger!.
Boil chicken in water for 30 minutes!. Bone and shred!.
Arrange cucumber and chicken on platter!.
Mix with hot sauce just before serving!.
Hot Sauce:
1 tbsp!. sesame sauce
dash of hot pepper sauce
1 tsp!. sesame oil
2 tbsp!. soy sauce
1/2 tbsp!. vinegar
1 tsp!. sugar
dash of Monosodium Glutamate (MSG)
Mix ingredients together in bowl!.

CHINESE SHRIMP WITH GREEN PEAS (CH'ING
TOW HSIA JEN)
1 lb!. shrimp
dash of salt
dash of ginger powder
1 tsp!. cooking wine
1/2 egg white
Clean and shell shrimp!. Remove black veins from shrimp!. Wash in salted water!. Drain!. Season with ginger and wine!. Mix with egg white!.
Mix with cornstarch!. Deep fry quickly in oil (280 degrees F!.) Heat 2 tbsp!. oil in another pan!. Saute shrimp until color changes!.
Peas:
1 tbsp!. cornstarch
oil for frying
2 tbsp!. green peas
2 tbsp!. oil
Seasonings:
1/2 tsp!. salt
1 tbsp!. cooking wine
dash of sugar
dash of Monosodium Glutamate (MSG)
Parboil fresh peas in salted water!.
Add seasonings and green peas to shrimp!.
Serve hot!.

1 cabbage, small, shredded
1 lb fresh mushrooms
2 chopped green onions
1/2 lb bean sprouts
Mix separately:
1/4 cup sesame seeds
1/2 pkg Chow Mein noodles
1 pkg Ichiban noodles (no seasoning)
DRESSING:
1/2 tsp pepper
1 pkg Ichiban seasoning
1/2 c oil
3 tsp vinegar
1 tsp Accent
Mix together and serve!.

1!.5 lbs sirloin steak; sliced thinly
2 green bell peppers; cut into bite-sized pieces
1 yellow onion; cut into bite-sized pieces
1 can diced tomatoes; drained
2 cups water
1/4 cup vegetable oil
1/2 teaspoon ground ginger
1 teaspoon garlic salt
1 tablespoon granulated sugar
2 tablespoons corn starch
4 tablespoons soy sauce
Heat oil in a large skillet until very hot!. Add the meat and stir-fry until nicely browned!. Add the onion, water, garlic salt, and ginger!. Bring mixture to a boil, cover and cook for about 5 minutes!. Add the bell peppers, cover, and cook about 5 more minutes, or until the peppers are tender!. Add the tomatoes!.
Combine the sugar, corn starch, and soy sauce in a bowl and whisk together until well combined!. Add this mixture to the meat and pepper mixture and bring to a boil!. Continue to cool, uncovered, until the sauce thickens!.
Serve over steamed rice!.

Cashew Chicken
chicken -
2 tb oil
mushrooms
gren pepper
water chestunuts
Cashews (I happened to use pieces because it was cheaper & easier for my toddler to eat)
Sauce (recipe below)

In the same skillet, stir-fry the mushrooms, green pepper, onions and ginger in remaining oil until green pepper is crisp-tender, about 5 minutes!. Stir in the chicken, water chestnuts and cashews; heat through!.
Add sauce (see below) to the pan!. Bring to a boil; cook and stir for 1-2 minutes or until thickened!. Serve with rice!. Yield: 4-6 servings!.
